Personally, I find that dal kachori with aloo tarkari is a more flavorful and delicious fried snack than samosas or pakoras. I love pairing dal kachori with aloo chana tarkari as it is a common and tasty snack. This highly sought-after snack can be easily prepared at home using readily available ingredients. Despite its seemingly complex appearance, it is actually a simple dish to make, making it a great option for unexpected guests or when you don't feel like cooking something extravagant.

In a pan/pot add lentils along with spices bring them to a boil and cover them until they are soft
Note: There should be no remaining water in the dal if you see water remaining in it then dry it on high flame first. now let it cool down

Grind them in a chopper machine till turn to the fine dal mixture

Shift the ground dal to the bowl and keep it aside.

Take a large size bowl to add all-purpose flour with spices and mix them well together until the crumbles texture, start kneading the dough by adding water little by little




Knead to the smooth and super soft dough for around 10-15 minutes, you can see the softness of the dough in the below photo

Cover it with cling wrap, and set aside for resting for around 15 minutes

Take the dough out punch it again for 5 minutes, and apply oil all over the kachori dough

Cut the dough into halves

Divide the dough into equal portions, make smooth balls, and flatten them between your palms.

Cover the dough portions with a kitchen towel to prevent dryness

Before you start filling place the wok with oil on the stove over a low-medium flame




Take one flattened ball at a time then roll it 1.5 inches in the round shape. Place 1 portion of dal stuffing in the center

Gather the edges and pinch them into the center seal them tightly and flatten them by pressing very gently. Press the kachori gently with an oily hand

Note, don't use flour at the time of stuffing or pressing kachoris because they become hard and won't puffy

Repeat the same process with other dough balls

In the hot oil put kachori turn the flame down to low-medium -medium and press it with a scoop.

Fry each side till turns to a nice golden brown color from both sides, now drain them out from the oil.

Place all kachoris on the kitchen towel to remove excess oil.

This delicious pizza burger twist on a classic lunch favorite is perfect for a quick weeknight dinner that the whole family will enjoy. These burgers are made with saucy ground meat and loads of melted cheese, sandwiched between your favorite buns.

I used to choose between pizza or burger, but now I can enjoy both in one dish. A soft beef patty with melted cheese, black olives, and veggies makes a delicious recipe. Patties can be used as kababs or meatballs in pasta, rice, or spaghetti, not only in burgers.

Recipe Tips:

Burger Patty: I made a beef patty, but if you can't eat beef for religious or medical reasons, you can use mutton, lamb, or chicken as a substitute. 

Burger Buns: Here, I used homemade buns for the burgers. I always prefer to use my own spices and bread instead of buying from bakeries.

Onion Powder: To achieve a store-bought taste in your burger patty, it is important to follow my recipe correctly. I highly recommend using onion powder instead of chopped onion, as it will enhance the flavor and keep the patty succulent without breaking apart. 

Ginger Garlic Powder: Please keep in mind that this recipe requires only powdered ingredients to ensure that the patty remains firm and does not break while frying. I suggest using fresh ginger and garlic powder instead of ginger garlic paste, as using paste may make the patty turn soggy and moist.

Cheese Slices: For burgers, mozzarella or cheddar cheese

slices are great alternatives to regular cheese.

Black Olives: Olives, whether green or black, are a popular pizza topping. However, I recommend using a high-quality brand of black olives. 

Mixed Cheddar and Mozzarella: I used mixed cheese for the topping, while you can use the single cheese that you like most.

Veggies: I added chopped onions, tomatoes, and green peppers to the dish. For a variation, you can substitute them with baby corn, mushroom slices, or jalapenos.


Pizza Seasoning: Pizza seasoning, sprinkled on top, is
essential for a delicious pizza. While store-bought is fine, I prefer homemade seasoning. Click the link below for my recipe.

Pizza Sauce: A homemade Pizza Sauce can be easily made by mixing chili flakes, thyme, and basil with tomato ketchup.

Tomato Ketchup: I recently used my own homemade ketchup in a pizza burger, but you could also use store-bought if you prefer. I have a suggestion for you - try using chili garlic tomato ketchup in a pizza burger to really bring out the flavors in every bite.

Cheese Sauce: To enhance the flavor of your pizza burger, try adding a delicious cheese sauce. I recommend using a recipe with grated cheese, cheese slices, and cheese sauce. This will result in a mouth-watering, cheesy, and spicy burger. I personally used my own cheese sauce and highly recommend using it in your burger.

How to make Burger sauce?

Making burger sauce is easy with just 3 ingredients: hot sauce, mustard paste, and homemade mayonnaise.

How to Make Pizza Burger?

Let's start the recipe by finely mincing the meat. If you have a meat mincer machine at home, it's easy to make it yourself. Otherwise, ask your butcher to use their mincer machine to finely mince the meat. Just make sure they use the tiny hole blades as specified in the recipe for a fine mince.

In this recipe, there is no need for extensive cutting or cooking. However, we will need to prepare the vegetables, chop and slice the onion, tomato, and capsicum, and grate the cheese.

To make the meat dough, start by mixing together salt, ginger, garlic powder, onion powder, chili flakes, black pepper, mustard paste, and lemon juice to mince meat. and mix well for 2-3 minutes. Then, add chopped coriander, green chili, and yolks and mix until everything is fully incorporated.

Knead the mixture like dough for 10 minutes, adding cornflour as necessary, and mix well until the meat dough is formed. Finally, let the dough rest for an hour before using.

After an hour of kneading the meat dough, take it out and begin shaping medium-sized portions into patties.

At this stage, you can store the patties for use ahead

In a small bowl, mix hot chili sauce, mustard paste, and mayonnaise together and mix for approximately 2-3 minutes until well combined.

To prepare, start by placing a burger slice on a baking tray. Next, spread pizza sauce on each bun slice and sprinkle chopped onion, tomato, and cheese.

Then, add some capsicum and tomato slices beside black olives. Finally, sprinkle some chili flakes and pizza seasoning. If required, add some more cheese.

Finally, bake the bun slices for 15 minutes at 200C in a preheated oven.

To fry patties, first, apply some oil on a griddle or pan. Place 2-3 patties on the griddle in one batch, or as per the size of your pan. Fry the patties over medium flame. If you fry them on high flame, they will remain uncooked from the inside and burn from the outside.

On the other hand, if you keep the flame low, the patties will turn soggy. Even though this recipe does not require crisp crust patties, you still need to maintain the flame heat to get the perfect result as shown in the video and picture.

Keep flipping the patties until they are fully cooked and get a brownish color on top. Once fried, take them out and place them on kitchen paper to absorb unnecessary oil.

Add butter to the griddle and toast bun slices on low flame for 2 minutes. don't toast on high to avoid burning from the base.

Now To make pizza burgers, start by spreading some burger
sauce on each bun slice and place a patty on top

Drizzle some ketchup over the patty and add a slice of cheese. Next, pour some cheese sauce over the cheese slice and add a little more ketchup.

Finally, cover the burgers with the other half of the bun and seal them with skewers on top. Your pizza burgers are now ready to serve! For best results, serve them fresh out of the oven.

During rainy weather, chicken potato balls are a delicious snack that many enjoy. These chicken potato cheese balls are coated with egg and bread crumbs on the outside, with melted cheese inside that simply melts in your mouth.

RECIPE INGREDIENTS:

Potato: In the summer, some types of potatoes become sweet which can ruin the taste of certain recipes. To avoid this, use red potatoes which are perfect for this recipe.

Chicken: I used chicken thigh pieces because they are juicier and more tender than chicken breast. If using chicken breast, marinate it in buttermilk or lemon juice for added tenderness.

Cheese: For cheese balls, it's best to use high-quality pizza or mozzarella cheese that will melt quickly when deep-fried, creating delicious gooey cheese in the center of the chicken balls. I recommend using small pieces of mozzarella cheese for this recipe.

Bread crumbs: For snack items, it's always best to use homemade breadcrumbs. I used my own breadcrumbs in this recipe, but fresh breadcrumbs or rusk crumbs can also be used.                                        

                                                

CHEESE BALLS

Egg: I coated the balls with beaten egg, but if you're vegetarian or allergic to eggs, you can use a mixture of all-purpose flour and corn flour instead. 

Oil: The taste of your fried items greatly relies on the quality of the oil used.

Can I store items for future use?

Make-ahead party appetizers are a favorite of mine. Simply shape the chicken balls, freeze them, and coat them in flour, egg white, and breadcrumbs before frying.

I usually shape them an hour before the party and store them in the fridge. This trick helps me serve delicious cheese balls in no time, which always wins me many compliments for being a perfect hostess. They are crunchy, full of flavor, and disappear quickly.

How to make chicken cheese balls recipe?

To make chicken potato cheese balls, first, boil chicken pieces in 200 ml of water with 1 tsp ginger garlic paste. dry water and shred chicken thinly after it cools.

Put the potatoes into the water and make them to a hard boil. don't overcook the potatoes as if you overcook them they disintegrate and your potatoes will be soupy

The specific cooking time depends on the size of your potato: a perfectly cooked piece of potato should give no resistance when cut with a knife, but shouldn't crumble into a million pieces.

Breaking down blocks of cheese is easy to do with a chef’s knife or skeleton knife. Simply slice the cheese into eighth-inch-thick planks, cutting those planks into smaller rectangles as needed. then cut into cubes Once all your cheese has been cut, sliced, or chunked, you’re ready to assemble your cheese board

In a mixing bowl, combine boiled and grated potato, shredded
chicken, fresh parsley or coriander, salt, mustard powder, red chili powder, black pepper powder, chaat masala powder, garlic powder, yolk, and peri-peri seasoning.

Mix until everything is well incorporated.

Once the mixture forms into a dough, let it rest for around 10 minutes.

Take a medium-sized portion of chicken potato dough, spread it over your palm, and place a cheese cube in the center

And seal it firmly from all sides. Ensure the cheese cube is
perfectly sealed. If you take a small portion of potato chicken. it may come out from the mixture while frying.

Once chicken potato cheese balls are ready.

Dip them into beaten eggs or all the flour batter that I mentioned above then coat them with breadcrumbs

At this stage, you can store it in an airtight container or ziplock bag for use ahead.

Heat the oil in the wok to a temperature of 130-150°C. If it's too hot (180-200°C), the balls will brown too quickly or remain uncooked from the inside. If the flame is too low (around 60-70°C), the balls will absorb the oil and become oily and soggy instead of crispy.

Once the oil gets medium hot as per mentioned accurate temperature above. put the 3-4 balls in one batch and let them fry until they start coming on top

Flip them carefully don't stir rapidly with the slotted spoon. otherwise, chicken potato cheese balls may break apart.

Keep flipping the balls to bring an evenly golden brown color on top once fried transfer them onto the kitchen paper towel.
