Spicy Green Hara Lehsun & Mooli Chutney

Discover how to make vibrant Green Hara Lehsun and mooli chutney. Learn the perfect traditional pairings: comforting dal khichdi and fresh, hot rotis.

Hara lehsun chutney and mooli patta chutney are vibrant, flavorful, and nutritious accompaniments that elevate any simple meal. Whether you're enjoying a comforting plate of dal chawal, dal roti, khichdi, or any variety of stuffed parathas, these chutneys add a delightful zing to your dining experience.

I prepared these chutneys separately to highlight their distinct flavors rather than combine them. These winter specialties are particularly cherished during the colder months when fresh spring garlic and radish greens are readily available.

However, if you wish to savor their taste beyond winter, you can easily store them in an airtight container or jar. They will remain fresh for approximately six months.

Simply take them out of the refrigerator, allow them to come to room temperature, or defrost them in the microwave. To enhance the chutney, simply add some mustard oil, and it will be ready to enjoy.

In my earlier post, I shared my take on mooli patta chutney and hara lehsun chutney. Today, I am excited to present you with another delicious variation of these cherished recipes.

My Latest Lehsun and Mooli Chutney Video:

Avoid boiling radish leaves, as it can cause the loss of essential nutrients. Instead, roast them on a tawa to maintain their nutritional value and enhance the flavor. Oil Selection:
Incorporating mustard oil in both chutneys significantly enhances the flavor profile compared to other oils. If mustard oil is difficult to find in your area, you may substitute it with another oil, although the taste may not be as rich.

For optimal flavor, the consistency of Mooli Patta Chutney or Hara Lehsun Chutney should be medium-thick. A chutney that is too thin may lack flavor, while one that is too thick can be overpowering.

If needed, add water in increments of one tablespoon to achieve the desired consistency, but avoid adding more water once mixed.

Mustard Oil Quantity:
A larger quantity of mustard oil enhances the chutney's taste, so don’t hesitate to use it generously. Spiciness Level:
The addition of chili flakes is optional. If you prefer a milder chutney, feel free to skip them since green chilies have already been included in the blend for heat. Chili flakes can add a spicier kick, but they are not necessary. Additional Ingredients:
Including a small amount of fresh coriander leaves along with spring garlic (hara lehsun) adds a vibrant green color. Also, consider adding roasted peanuts for thickness and an earthy flavor, which is recommended and should not be skipped. Sourness Balance:
Fresh lemon juice in both chutneys introduces a pleasant tanginess. Alternatively, mango powder (amchur) can be used. However, it is advisable to avoid white vinegar, tamarind pulp, or additional water, as these can introduce undesirable sourness and compromise the overall taste of the chutneys.

How to Make Mooli and Hara Lehsun Chutney:

Preparation for Chutney:

To start, gather fresh radish leaves and aromatic garlic, and thoroughly wash them to remove any dirt. Once cleaned, carefully cut and peel the radish leaves, ensuring you retain their vibrant green color and nutrients.

Roasting Ingredients:

Next, heat a tawa or skillet over high heat until it's sizzling hot. Add the washed radish leaves and roast them, stirring occasionally, until they wilt and shrink significantly in size, releasing their earthy aroma.

Afterward, introduce the garlic cloves, green chilies, and radish pieces to the pan. Roast these ingredients until they develop a slight char and golden marks,

which enhance their flavor profile. Once well-roasted, turn off the heat and let them cool slightly.

Blending Mooli Patta Chutney:

In a blender jug, combine the roasted radish leaves, radish, green chilies, garlic, toasted cumin seeds, salt, lemon juice, and a drizzle of mustard oil.

Add 2 to 3 tablespoons of water to help achieve a smooth consistency; feel free to add more if necessary.

Blend the mixture until it transforms into a silky smooth paste. Once blended, transfer the chutney to a bowl. Taste and adjust the salt if needed.

And if desired, incorporate a bit more mustard oil for richness. For those who enjoy a kick, sprinkle in some red chili flakes—this step is entirely optional for those who prefer milder flavors.

Blending Hara Lehsun Chutney:

In the same blender jug (no need to wash it), add chopped hara lehsun (green garlic), fresh coriander leaves, additional green chilies, salt, roasted peanuts for crunch, and a splash of fresh lemon juice. Blend these together with a little water until you achieve a fine, smooth paste.

The Perfect Hara Lehsun vs. Traditional Mooli

 Chutney

A simple bowl of comforting dal khichdi- nothing beats the rustic charm of fresh, homemade chutneys. Today, we are breaking down two distinct, winter-special condiments that bring completely different dimensions of flavor to your plate: Hara Lehsun Chutney and Mooli Chutney.

🍃 The Vibrant Zing: Hara Lehsun Chutney

The Look & Texture: A deep, textured emerald-green paste made using seasonal green garlic stalks, fresh coriander leaves, and spicy green chilies.

The Flavor Profile: Bold, pungent, and sharply aromatic. The fresh green garlic offers a milder, sweeter garlic note than traditional dried bulbs, but it still packs an incredible punch that cuts right through the richness of ghee-laden khichdi.

Best Pairings: A must-have side for heavy winter dishes, millets, bajra rotis, and rustic lentils.

The Earthy Crunch: Traditional Mooli Chutney

The Look & Texture: A beautiful, pale white-and-green rustic mix. It features finely grated or crushed white radish (mooli), often combined with its own tender green leaves.

The Flavor Profile: Intensely refreshing, crisp, and peppery with a natural sulfur bite. It brings a uniquely cool yet sharp contrast that cleanses the palate after every spoonful of hot food.

Best Pairings: Serves as a perfect counterbalance to fried

snacks like parathas, fritters, and simple, soothing rice dishes.
