Malai namkeen chicken is a delicious, succulent, and mildly spiced chicken recipe. It is made with basic spices and goes well with Bread Slices, Bun Burgers, Bakery Sheermal, or even with Puri Paratha or Puri. This chicken can also be used in Roll Paratha.
This recipe is totally the other chicken
version that I made by thinking of two combinations of recipes, malai and
namkeen. It has been a great experiment. You can even add many of the recipes, like Sandwich, Noodles, or Plain Rice.
In this namkeen chicken recipe, chicken pieces are
lightly cooked in yogurt and milk with basic spices rather than cream. Apart
from that, they are very mildly spiced and tangy with a black pepper flavor. This chicken isn’t marinated or uses any
cream in it, even then, it is made juicy and super soft.

Recipe notes:
Traditionally, cream is used to make
succulent meat in a malai recipe, but here I used only milk and yogurt. However, you can
use yogurt and cream for a richer flavor.
I opted for chicken with bones in this
recipe, although breast or thigh meat can also be used. I strongly recommend using
chicken with bones, as they release their juices and help enhance the taste of the curry.
Additionally, I used butter mixed with olive oil in this
recipe. Don’t skip this ingredient, as butter preserves the flavor of malai
chicken.

Mix the yogurt with milk very well.
Keep aside
In the pan, heat up the butter with the oil
for a minute. Next, put chicken pieces in the pan and fry them until they change color.
Then add ginger garlic paste.
Keep on stirring by adding chopped green chilies, salt, cumin powder, and crushed coriander powder.
Once the oil is separated, pour the yogurt mixture into the chicken. Bring it to a boil.
Cook the chicken until the water dries out.
Next, squeeze the lemon juice, add grated
ginger, and black pepper powder.
Further, give it to good stir.
And then simmer for 2-3 minutes over low
heat.
Malai namkeen chicken is done.
Transfer to the serving bowl and garnish with coriander leaves.s
Serve the malai namkeen chicken with rumali roti and paratha.

- ½ kg, chicken with bones
- 1 ½ tbsp butter/margarine
- 3 tbsp olive oil
- 1 tbsp ginger garlic paste
