Vegetable Pakoras are a delicious, crisp, veggie deep-fried snack, which is made out of gram flour, peas, potato, spring onion, and spices. A great snack for the pakora lovers, Here I used the double frying method to make the fritters crisp, but if you don’t want to do the double frying method due to time shortness they can just single fry and then serve_

Pakodas are something that almost every one of us enjoys and these Aloo Matar pakoras are the ultimate makeover to the regular pakoras and can be served with any chutney or ketchup of your choice.

The most amazing part is, that you can make the pakora mixture in the morning and refrigerate it, fry it when serving in the evening or on the arrival of guests. In this recipe, the Aloo Matar pakora is deep-fried but you can make them in a  pan, which uses less oil.

how to make vegetable pakora


To prepare this recipe first take all ingredients and prepare all veggies

Boil the water and blanch the potatoes for 3-4 minutes on high flame-drain the potatoes into a colander

Now transfer the all veggies to the bowl and set them aside

Crush the coriander, pomegranate, and cumin seeds in the mortar

In a veggies, bowl put gram flour, rice flour with spices

Stir to mix well together

Keep mixing the gram flour mixture by adding water gradually_We need a thick batter this is the reason for adding that much water so that could be prepared a thick batter
As you can see in the picture below, Now leave the pakora batter to rest by covering the lid for 30 minutes

Heat the medium hot oil in the wok at around 140 c

Mix the gram flour batter again

Put medium-sized pakora batter to the oil_4-5 pakora batter to the oil_And fry pakoras for 3-4 minutes over low medium flame



Then drain the pakoras into the kitchen paper

2nd frying:
Heat the oil again at around 180 C

Put all fried pakoras back into the hot oil_Fry them over medium-high heat until brown

Drain the pakoras on the kitchen napkin paper

Ingredients:
  1. 4 tbsp, gram flour
  2. 2 tbsp, rice flour
  3. 1 ½ tsp, red chili powder
  4. ½ tsp, turmeric powder
  5. 1 tsp, black pepper
  6. 1/8 tsp, baking soda
  7. Salt to taste
  8. 1 tsp, pomegranate seeds crushed
  9. 1 tsp, coriander seeds crushed
  10. 1 tsp, cumin seeds crushed
  11. 2-3 pinches, lemon color optional
Veggies:
  1. 2 medium-sized, potatoes blanched
  2. ½ cup, of peas
  3. ½ cup, spring onion chopped
  4. 4-5, garlic cloves chopped
  5. A handful, of coriander, leaves chopped
  6. 4-5 pcs, green chilies chopped 
How to make the Veg pakora?
  1. To prepare this recipe first take all ingredients and prepare all veggies

  6. Stir to mix well together
  7. Keep mixing the gram flour mixture by adding water gradually
  8. We need thick batter this is the reason adding that much water could prepare thick batter
  9. Now leave the pakora batter to rest by covering the lid for 30 minutes
  10. Heat the medium hot oil in the wok at around 140 c
  11. Put medium-sized pakora batter into the oil
  12. 4-5 pakora batter to the oil
  13. And fry pakoras for 3-4 minutes over low medium flame
  14. If you gonna single fry pakoras then fry them until you can get a golden brown color  
  15. Then drain the pakoras into the kitchen paper
  16. Heat the oil again at around 180 C
  17. Put all fried pakoras back into the hot oil
  18. Fry them over medium-high heat until brown
  19. Drain the pakoras on the kitchen napkin
  20. Transfer the pakoras to the serving plate
  21. Note: I have mentioned above if you don’t like the double-frying method you can skip this step
  22. Aloo Matar pakoras are ready to serve
  23. Serve the pakoras with chutney and tea
