Maghaz Masala of the mutton brain, curry is the perfect, flavored, and delicious dish to prepare and relish during the rainy paired with naan or chapati

Brain Masala is a Pakistani dish made from the fried brain of a goat with spicy Masala to give it a perfect traditional taste. Brain Masala is also known as “Maghaz Masala” or “Bheja Fry” in Urdu. This recipe can be made with beef or lamb’s brain following the same recipe. Ingredients used to make Brain Masala onion (brown and paste), ginger/ garlic paste, tomato, red chili powder, turmeric powder, salt, coriander, and oil.

This amazing Magaz Masala recipe is an excellent and healthy dish, as well as a popular dish which actually is used brain of goat, lamb, or cow, another well-known name, is Bheja Fry which is quite a common name in Pakistani hotels, and restaurants and roadsides restaurant or dhaba hotel

To prepare maghaz masala first we will boil the maghaz in the turmeric water

Take a medium pot pour water with turmeric powder, bring it to a boil then put brains in the water, boil it on high flame for around 5 minutes, drain them out in the colander, and remove the veins instantly, coarsely cut the brain keep aside

Take all the ingredients and prepare them

Heat the oil and saute the onion for 5 minutes add cumin seeds and mix them well

    Now add ginger garlic paste and fry it with onion for a minute then add chopped tomatoes, and cook the tomatoes with onion on medium flame until turns soft

    Add all dry powder spices

    Keep mixing by adding salt to the masala

    Now add grated ginger and chopped green chilies to the masala, stir to mix well, and splash some water to prevent stick masala from base

    Cook masala until oil comes on top

    Add chopped maghaz to the cooked masala, stir to mix well maghaz with masala then add garam masala

    Now add green chilies, and coriander leaves along with lemon juice then mix well with a light hand, simmer the maghaz masala for 2 minutes on a very low flame

    Transfer to the serving dish/plate and serve hot with chapatiroti, and naan...

    Mutton White Karahi is a quite simple, delicious, and creamy flavored mutton dish, It is prepared in a traditional style with mutton meat, masala, garlic, green chilies, cream, and yogurt. It takes less time to be prepared. Follow the Mutton White Karahi recipe as it is to get the best results. It is suitable for dinner or lunch as a main course item.

    Yogurt and cream give it a creamy flavor and make it more delicious_Personally I love this although it contains high calories due to the presence of cream in this dish goes well with paratha and rumali roti

    Mainly white mutton karahi is a Pakistani Dhaba (roadside restaurant ) food, this recipe is an amazing day saver and even face-saver when you have no time to cook or you have an unexpected guest or you have been out the whole day and you don’t want to order food because you want home-cooked food, this is a quick recipe of white karahi never disappointed on such occasions. In the recipe below

    I cooked the chicken directly. But sometimes, when I have time to plan, I simply marinate the chicken with everything in the recipe except cream. Then I cook it until all the masala is fried well and then I add cream and follow the remaining step as it is. And it’s so simple. I particularly wanted to share this pre-marination trick so someone can benefit. Try to cook in a wok (karahi), but if you don’t have one, you can cook in a pot or pan.

    To prepare this recipe firstly rinse the mutton under the running water and put it into the pot with water and ginger garlic_Stir to combine well

    Bring it to a boil on a high flame, Once it reaches boiling point turn the flame to medium and cover the lid_Allow cooking meat until mutton gets tender about 90%

    If the water remains in the mutton then strain it out and separate the meat

    Dry roast the black peppercorn, cumin, and coriander seeds on low flame for a minute and then grind into a slightly coarse powder_Now put the roasted and crushed masala along with 2 tbsp mutton stock to the yogurt if it remains otherwise add a little water instead of stock

    Take the wok/pot and add oil and butter together, heat them. Put mutton along with the remaining mutton stock

    Keep mixing by adding green chili paste and spiced yogurt_Now this time turn to roast the karahi on the high-medium flame as the actual taste comes when any type of authentic karahi is roasted

    Once the water gets reduced then put heavy cream along with white pepper

    Chowmein Pasta is a traditional Chinese delicious dish, that can cook within 30-40 minutes_ origin in Chinese cuisine, it is made with marinated fried chicken strips along with sautéed veggies with a few spices and sauces
    Comforting Chinese made with lean white meat protein, colorful vegetables, and stir-fried noodles tossed in a savory sauce. You can’t go wrong with restaurant-quality Chicken Chow Mein! One of the most popular stir-fried noodles the family goes crazy for

    Usually, people prepare chow mein with spaghetti/noodles but here I made some changes to this recipe and cook in my style_firstly I didn’t use ketchup as I don’t like using it in chow mein or any other type of Chinese cooking  secondly I cooked chow mein with pasta instead of noodles or spaghetti 
    This will likely become one of your go-to dinner recipes because it's very easy to make yet it tastes so good besides a wholesome recipe

    A big bowl of homemade chicken chow mein is way more satisfying and can be made with ease_tender pieces of chicken breast are marinated in salt, black pepper, cornflour, and white egg and then deep-fried until lightly browned_to add some crunch and a colorful combination of chopped vegetables like carrots, cabbage, spring onion, green or red capsicum are added, an authentic savory sauce coats each chewy Italian pasta for an irresistible dish the whole we love

    Ingredients that are used in the recipe:
    Meat: I used broiler chicken breast but the best part of the chicken is thigh meat that is also tender and juicy_i prefer using thigh instead of breast
    Veggies: green cabbage, carrot, spring onion, and capsicum are added to the recipe but you can use any other veggies of your choice like peas, yellow and red pepper, purple cabbage, and beans  
    Sauces: red chili sauce, soya sauce, white vinegar, Worcestershire sauce along with sesame oil which is the main ingredient of this recipe_adding sauce of your choice is up to you
    I skipped adding ketchup and alternatively, added chili sauce in my recipe as I understand red chili sauce can enhance the taste of chow mein rather than ketchup
    Ketchup is considered the main ingredient of the recipe alternatively can be used as chili sauce or garlic sauce as well
    Spices: I used black pepper, salt, cornflour, white pepper, and chicken powder_you can use red chili flakes too if you are a spice lover
    Chowmein noodles: this recipe can be used in many verities of noodles, spaghetti, egg noodles, Italian pasta, or macarons as well

    Tips For Cooking:
    I cook the chicken first in hot oil to create a lightly golden surface. The meat also gets an extra layer of texture from the small amount of cornstarch added to the marinade. The lean poultry cooks in just a few minutes and then gets transferred to a plate so it doesn’t dry out.

    What Vegetables Go in Chow Mein:
    Adding nutritious vegetables brings vibrant colors to the dish and more texture contrast. The cabbage, carrots, capsicum, and onions are sliced thin so they cook quickly and blend in nicely with everything

    To make this recipe firstly marinate the chicken pieces rinse the chicken breast thoroughly and then cut it into strips and put it in the bowl

    Marinate the cut pieces of chicken in a few spices to infuse flavor onto the surface of the protein for added flavor_Add cornflour, salt, black pepper, and white egg to the chicken

    Stir to combine well and keep in the fridge for 30 minutes for marination       

                     


    Boil the water with 1 tsp salt and 2 tbsp oil in a large-sized pot_Bring it to a boil then put the pasta in the water and cook for around 7-8 minutes on the high-medium flame_Drain the pasta onto the colander then set aside

    Chop the veggies lengthwise

    Heat the oil in the wok and fry marinated chicken strips until evenly light brown_Drain the fried chicken strips on the plate

    Set aside, Once all the ingredients are cut, fried, and ready to go, it’s time to stir-fry!

    Heat the oil and add chopped ginger-garlic to the oil_Fry them for a minute on medium flame. Put chopped cabbage, carrots, and capsicum into the oil and sauté them together for 1-2 minutes on the high-medium flame

    Then add half the quantity of spring onion and further, keep on stirring by adding green chilies slices. Stir-fried veggies hardly will take 3-4 minutes

    Now lower the flame to low and start adding spices to the veggies such as black and white pepper, salt, and chicken powder

    Keep on stirring further for a minute then put fried chicken strips

    Keep mixing by adding soya sauce, chili sauce, Worcestershire sauce, and white vinegar
