Orji Recipe is quite a delicious, spicy, and mouthwatering non-veg recipe made with beef or mutton belly by cleaning from inside and outside. a large number of people don’t like to eat but rather feel disgusted. whereas if you cook the ojri also called butt by cleaning and well roasting with masala it becomes so tasty and goes well with BOILED RICE, ZEERA RICE, and NAAN

I grew up eating this delicious beef butt (ojri) curry with rice. Personally, I love to eat. I never eat mutton ojri nor wanna eating just because they are too thin and have weird skin that makes me feel nauseous feeling.

First time I am sharing this ojri (butt) recipe. hopefully whoever likes to eat butt (ojri) would like my recipe because I made it in a very short way and easy to make. though this video that I am sharing is short soon will share a long video in which I prepared butt curry.

Some Tips For Ojri:


Buying Ojri: I have bought already neat and clean ojri from the butcher's shop I just wash them (ojri) with warm water but if you don’t get clean butt (ojri) from your area or butcher shop then don’t need to panic here I will tell of method cleaning ojri  

Beef Ojri: Always try to buy the thick ojri rather than the thin. It tastes great and makes it tender and juicy. while thin ojri doesn't give the perfect result and taste

Warm the water apply some wheat flour over the ojri and let them remain for 10 minutes. wash them very well by using warm water and clean all fat from the butt (ojri) ojri is ready to cook

Mutton Ojri: Though I never cooked mutton ojri I won’t say you don’t buy or cook it by choice so here I can tell you how to clean mutton ojri.

Heat the water with a little salt in a Broad Pan/Wok: first, cut out a big piece of mutton ojri and put the pieces one by one in the hot water. (keep remembering the stove flame is turned off when you are putting butt pieces in water)

Take out the ojri piece and clean the skin with a sharp knife It would clean immediately but mind it the water should be hot enough

Use Fresh Ojri: Try to buy fresh ojri and avoid buying stale as ojri easily rotten and gets stinky and never goes away even you cooked

Tips for Cooking Ojri: roasting ojri with masala for 10-15 minutes. a key of aromatic and flavored ojri curry as the unpleasant odor of ojri goes away with well-roasted techniques. I have shown in my video when oil comes up and Ojri turns beautifully roasted by look then I pour water. you are to follow my tips to make delicious curry.

Yogurt and Ginger Garlic Paste: Use unsweetened yogurt and fresh ground ginger garlic paste. they are all agents of getting rid of the smell and bringing taste to the meal

Cooking tip: Cook ojri in a heavy bottom pot as ojri takes time to be tender. if you would use a thin bottom pot your ojri quickly burns after drying water. for best results use a pressure cooker to make tender and juicy curry. In case you don’t have a pressure cooker or you are a bit scared using this then you make ojri in the heavy bottom pot for around 2 hours in medium flame until tender.

How to Make Ojri Recipe?

To make ojri curry first wash the ojri (butt) with wheat flour as I told above in my tips. and cut into medium-sized chunks.set aside

 Take a pressure cooker and combine all ingredients such as oil, chopped onion, washed ojri (butt)ginger garlic paste, salt, Kashmiri red chili powder, red chili powder, turmeric powder, black pepper powder, crushed coriander powder, tenderizer powder, and yogurt in a pot

Roast the ojri with all the masala until oil comes up. Once the oil is separated

Then pour hot water into the ojri. Bring it to a boil then close the pressure cooker lid. Af the after whistling cook the butt (ojri) for around 30-40 minutes on a medium flame

For precaution let the pressure release naturally then remove the lid towards the opposite side of you to escape steam over your face and hand.

                                                                          


Now begin to stir the ojri masala over a low medium flame by adding green chilies,kasuri methi,garam masala, and chopped coriander leaves.

Stir well and 1/2 cup some little water. then bring it to a boil You keep gravy consistency by your choice simmer for another 10 minutes on a very low flame 

                              


Transfer to the serving dish/bowl or plate

Tips to Make the Perfect Omelet:
  1. This recipe is for a basic 4-egg omelet. If you want a more-egg omelet, be sure to use a 10-inch pan rather than the 8-inch pan specified in the recipe. 
  2. If you have a non-stick pan, use it. It is the best thing to make omelets in. I have one non-stick pan and I only use it for omelets. 
  3. If you don’t have a non-stick pan, that’s ok, just make sure you take the oiling-the-pan step very seriously.
  4. Another great tool to have is a heat-resistant rubber spatula. It will help you flip like a pro
  5. The trick to these omelets is to cook them over medium-low heat. You don’t want to overcook the eggs at all. You want to make a nice, fluffy egg

Prepare all veggies onion, green chilies, capsicum, mint, coriander leaves, tomatoes, and spring onion, then shift to the medium-sized bowl

Crack the eggs in a bowl and beat till everything is incorporated, now combine all spices in the egg mixture

    Heat the oil in a frying pan on medium flame, Pour eggs into the pan and cook until the edges are brown approximately 2-3 minutes

    Chicken Yakhni soup is a highly popular street-style soup that is often served with boiled eggs during the winter months. However, while this soup may be delicious, it is not always the healthiest or most hygienic option. As an example, I have personally witnessed a street vendor making more than 60-70 small bowls of soup using only 500g of chicken. This raises concerns about the purity and healthiness of the soup being served.

    I have adapted a method for making street-style chicken yakhni soup while ensuring cleanliness and complete nutrition. Chicken yakhni is the perfect soup to soothe anyone with a cough or cold, and this beginner's recipe will give you all the warmth you need to fight off the cold weather. With just a handful of ingredients, this chicken yakhni recipe is easy to make.     Here are the ingredients typically used in

    Country chicken: Usually, street food vendors use farm chicken to make yakhni soup. However, if you're looking for a unique and healthy taste in your yakhni, you should try my recipe that uses country chicken. Country chicken is the best option for yakhni soup as it keeps you warm and helps to boost your immunity levels during winter, especially for elderly people.

    Butter: For those with health issues, butter can be replaced with olive oil in this recipe.

    Turmeric Powder: Using turmeric powder in yakhni brightens and detoxifies the body due to its anti-inflammatory and antioxidant properties that relieve bone pain.

    Salt: Based on personal experience, I suggest using plain rock salt or sea salt instead of refined salt as it can harm both mental and physical health.

    White pepper: White pepper powder has a milder taste compared to black pepper, but can still enhance flavor in recipes.

    Spiced Infusion: I prepared the spiced infusion with cloves, fennel, green cardamom, onion, coriander, cinnamon stick, black peppercorns, bay leaf, and ginger piece to flavor the chicken yakhni.

    Ginger garlic paste: Using fresh ginger garlic paste in yakhni enhances the taste.

    Crushed black pepper: If you want to enjoy a delicious and aromatic chicken yakhni soup, it is important to use freshly crushed black pepper instead of stale powder.

    How to make chicken Yakhni soup?

    To prepare a spice infusion for chicken, take a large piece of muslin cloth and add whole spices such as coriander seeds, black peppercorns, cinnamon sticks, bay leaves, cloves, green cardamom, fennel seeds, and a piece of ginger.

    Tie the cloth tightly to prevent the spices from escaping while the chicken is cooking. Alternatively, you can use a seasoning infuser ball. Set the spice infusion aside until ready to use.

    To boil eggs easily, take a saucepan and fill it with water. Add one teaspoon of salt to the water. Put the eggs in the pan and place it on high-medium flame. Boil the eggs for 10-15 minutes. Once boiled, turn off the flame and transfer the eggs to a bowl of cold water. 

    Crack the shells of the boiled eggs from outside and put them back into the cold water. This method makes it easier to peel off the eggshells without damaging the egg.

    To prepare the country chicken broth, take a medium-sized pot and add a little butter or oil of your preference to it. Heat the pot and add the washed country chicken to it. Roast the chicken with butter for a minute.

    Next, add 1 tbsp of ginger garlic paste and keep roasting until it changes color. Once done, pour 1.5 liters of water into the pot and stir well

    Add spices such as salt, white pepper powder, and turmeric powder. Stir well to combine and bring it to a boil. Then, put the spice infusion into the pot. Keep the flame at medium-low and cover the pot. Cook for around 1-2 hours.

    You will notice that the water gets reduced to half and the aroma also rises. Now, take the spice infusion out of the yakhni by squeezing it well and then discard it. At this stage, you can adjust the salt if needed.

    Sprinkle crushed black peppercorns and serve hot.

    Grilled Mutton Chops are delicious a bit tangy mutton chops the recipe is cooked on a grill pan or barbecue grill, and marinade with yogurt, green chili, black pepper, lemon juice, and papaya 

    A tender and succulent mutton chops would be a delight to have included in a family barbecue meet-up
    Here I used a grill pan to make chops, before grilling I leave it to rest overnight so that spices can be absorbed properly with chops, mutton chops can be cooked in several ways, such as fried mutton chops, masala chops, or grilled chops

    To make this recipe firstly marinade the mutton chop it, rinse, and beat the chops with a meat hammer or any heavy pin

    Put all mutton chops into a mixing bowl with marinade ingredients

    Mix chops with yogurt and spices, And keep in the fridge at least overnight

                    
            
    The next day preheat the grill pan by adding a little oil on medium-high heat
