Kaleji Masala is an amazingly delicious recipe made using liver, kidneys, the heart cooked along with onion spices and yogurt, and then roasted kaleji gurda mixed masala, no words to describe the unique and delicious taste, this is simply the best recipe to make most delicious and tender liver masala
I am using mutton liver, and gurda mixed you can use it by choice. this tasteful bhuni kaleji masala is prepared with a few spices

The main ingredients are our traditional black spice powder which includes peppercorn and cardamom this spice is added to enhance the taste of bhuni kaleji, black cardamom, and ginger always bringing a special and unique taste to meals

To prepare kaleji gurda mix first wash them under the running water to remove excess blood keep aside, take all ingredients, and prepare them all





Whisk the yogurt

    Heat the oil and saute onion slices, put kaleji mixed into the pot

      Fry them until changing their color

      Keep stirring by adding ginger garlic paste and papaya paste

      Add powder spices and stir to combine well

      Keep on stirring till the water dries up, you can see in the picture below water is almost has evaporated

      Now add the remaining onion to the kaleji mixed, keep mixing by adding black ground spice powder

      Keep mixing by adding yogurt

      Constantly keep mixing till oil is separated, pour hot and boiled water into the kaleji masala, further stir well

      Bring it to a boil, cover the lid, and allow to cook for 30-40 minutes over medium-low heat

      Remove the lid add salt to taste mix well then give it another 5 minutes to simmer

      Chicken liver masala is quite a delicious, healthy, and flavored fried liver that is prepared with a few basic spices, ghee, and herbs_There are so many ways to enjoy liver, but this has to be my favorite one. Both the texture and the flavor are on point in this chicken liver recipe 

      I have shared chicken liver masala recipes and even fried liver but this is another version make sure when you try it at home you will leave another type of liver_this is too succulent and soft that you can enjoy with Rotis and buns_a very easy and quick recipe which can be served at the time of sehri as well as lunch/dinner

      If you haven’t made chicken liver before, you may not know where to begin or how to cook it properly. While this chicken liver recipe is super simple, there are a couple of tips and tricks you need to know to get the best possible result and I’m here to tell you all about it.
      Soak the liver: soaking the chicken liver in vinegar water gets rid of the metallic taste that sometimes people dislike. If you have no vinegar, soaking in water will work also, but not as well. You might want to do this if you’re sensitive to the taste. Personally, I don’t soak the chicken liver at all.
      Season only during cooking: Seasoning before cooking will draw out the moisture and leave the liver tasting rubbery and dry. That’s why to preserve the perfect texture you must do it only during cooking.
      Do not overcook: overcooking the liver will cause it to become chalky instead of soft and tender. Take care to just quickly sear the outside, without overcooking the inside.
      Don't use salt during cooking: If you are cooking/frying chicken liver avoid using salt during cooking/frying_salt will make rubbery foam

      To prepare this recipe firstly rinse and clean the liver_you can soak them also in vinegar water for 10 minutes

      Take all veggies and prepare them

      In the pan put coriander and cumin seeds, dry red chili buttons, and black peppercorn_Dry roast them together for a minute on the low flame,Grind roasted whole spices in the mortar

      Whisk the yogurt and Mix all ground roasted spices with the yogurt

      Heat the ghee in the pot_Add ginger-garlic paste and sautรฉ it for a minute put chicken liver

      Fry them for 5 minutes on medium heat or until changes in color

      Stir to combine well and let them cook until water dries out

      Once water is reduced lower the flame to low

      Put chopped veggies green chilies, coriander leaves, and ginger

      Clarified ghee is a real taste enhanced only from cooking in desi ghee/clarified ghee I have told you in my previous post I don’t like desi ghee taste the reason I am using regular banaspati ghee but you can use it as your taste and choice
      Mutton korma is served with sheermal, naan, and rice

        Firstly peel and cut the onion into thin slices, In the pot/pan pour oil, and heat it well. Then add onion and fry it over high medium for 5-7 minutes. Then reduce the heat to medium-low and add 3-4 pinches salt, keep frying till turns to a crispy golden brown color Drain them out from the oil, spread on any plate/tray keep aside

        Wash and clean the mutton under the running water, and keep it aside

          Boil the water in the saucepan

            Whisk the yogurt and add korma masala in it_mix to combine well

              Ground the ginger garlic paste

              Heat the ghee in the pot, then add mutton meat and fry it till changes it's color add ginger garlic paste and fry it with mutton for 2 minutes

                Add spiced yogurt to the mutton




                Stir to mix well till the oil is separated

                Pour hot boiled water and stir to mix well further

                Bring korma to a boil, c
                over the lid, and cook it for 25-30 minutes over a medium-low flame
