Turai Chana || Ridge Gourd Recipe || How to Make Turai Chana Dal Ki Recipe with Step-by-step Photos

The Ridge Gourd recipe is a healthy combination of  chickpeas with ridge gourd cooked in a simple style along with adding masala, this is my own version usually I made turai with dal, meat, keema, and eggs but this time I changed my plan and made it with chana cholay the taste and flavor has been very good and delicious and the most important thing is that I prepared  it in very less time

Turai is called in English ridge gourd, is a tasty veggie with lots of iron vitamins and a considerable amount of nutritional value and is considered good for the human brain, I remember as I was a kid my mother used to bring ridge gourd flowers from aunty house where a very thick and the biggest plant of ridge gourd and I used to bring a lot of ridge flower by plucking  and my mother made pakoras from ridge gourd flower had a very tasty and unique flavor

Ridge gourd can be cooked with chana dal, meat, keema, and anda even in a simple manner Turai Bhujia an additional ingredient can be added to an omelet and served with chapatis,rotis, and rice, So let’s begin

Take all the ingredients and prepare them all, take a small bowl and put all dry spices like red chili powder, coriander powder, turmeric, salt, and cumin powder then add a little amount of water and dissolve them together set aside

Heat the oil add onion slices and saute them for 5 minutes on medium flame, add dissolved spices to the fried onions, and stir to mix well

Cook the masala mixture for 5 minutes on medium flame, o
nce oil comes on top

Put chopped ridge gourd into the masala and stir to mix well, let them cook till turn soft

Then add boiled chickpeas with ground spices powder in curry, stir well, and further cook it for about 10-15 minutes on medium-low flame

Reduce the heat to low and allow it to simmer it another 5 minutes,

Transfer to the serving bowl/plate,turai chana is ready to serve

Turai choly chana can be served with boiled rice,zeera rice,bagara, rice,rotis, and chapatis along with salad and cumin raita

Turai Chana Chole is a healthy combination of chickpeas with ridge gourd cooked in a simple style along with adding masala, this is my own version.

Ingredients:
  1. 750g, ridge gourd
  2. 1 large size, onion slice
  3. ½ cup, mustard oil/canola oil
  4. 1 cup, boiled white chickpeas
  5. Salt to taste
  6. ½ tsp, red chili powder
  7. 1 tsp, crushed coriander powder
  8. ½ tsp, cumin powder
  9. ½ tsp, turmeric powder
  10. ½ tsp, crushed red chili
  11. 1 tsp, chopped garlic cloves
Special Masala:
  1. 1 tsp, black peppercorn
  2. 2 pods, black cardamom
How to make Turai Chana Recipe?
  1. Heat the oil in a medium pot put chopped onions and sauté them for 5 minutes until translucent
  2. Add chopped garlic cloves and fry it with onions then add dissolved masala to the onion and stir well
  3. Let it cook until the oil is separated
  4. Then add chopped ridge gourd and stir to mix well
  5. Let them cook for 15 minutes on medium heat
  6. Once turai becomes soft and releases its water
  7. Then put boiled white chickpeas along with ground spices
  8. Stir to combine well
  9. Allow cooking another 10-15 minutes on low-medium heat till water dries out
  10. Reduce the heat to low and simmer it for 5 minutes
  11. Transfer to the serving bowl/dish
  12. Turai chana is done
  13. Note, don’t need additional water for the vegetables because turai itself contains a lot of water
  14. Turai chana can be served with boiled ricejeera rice,bagara rice,rotis, and chapatis along with salad and cumin raita
