Aloo Sabzi is a simple, easy tasty, and mildly spiced aloo sabzi, which can be served with puri or kachori and paratha this is also a side dish at breakfast
Basically, this is my own version once I did experiment with Aloo bhujia to bring a new taste to trust me this was superb, I often make it after my experiments, I enjoyed it with plain kachori, Aloo ki sabzi or Bhujia you can adjust red chilies and salt according to your taste

Aloo ki Sabji is an all-time favorite basic sabzi recipe made with diced potatoes and is a simple recipe made with basic ingredients available at home, Aloo sabzi is liked by every Pakistani and this recipe goes well mainly with roti or chapati, kachori, paratha, or rice. Potatoes are used most of the time to make various curries and this vegetable is liked by kids too.
Aloo is a great vegetable to make recipes for kids and pack for school tiffin boxes. This basic sabzi recipe with aloo is good to be eaten with roti and can be packed for lunch.
Aloo recipes made in all cities, and towns in Pakistan are slightly different according to their culture and taste
Here I used some curry leaves, cumin, and whole red chilies for crackling the rest of the spices are a bit the same as tomatoes, green chilies, and basic powder spices

Heat the oil in a medium pan/pot over a low flame then put whole spices and Crackle them for a few seconds on low flame
Right after put tomatoes and green chilies, saute them for a minute on low flame then add all the powder and spices along with splashing little water to prevent a burn from the base keep on stirring by adding potato dice
Roast them with spices for 2-3 minutes_Once oil comes on top, then pour hot boiled water and stir to combine well
Simmer it for about 2-3 minutes on a very low flame
Now Aloo sabzi is ready, transfer it to the serving bowl/dish

Ingredients:
- 300g, potatoes unpeeled and cut into slices
- 1 large, tomato peeled and cut into slices
- 6, small green chilies
- 1/3 tsp, nigella seeds
- 1 tsp, red chili flakes
- ½ tsp, turmeric
- 1 tsp, crushed coriander seeds
- Salt to taste
- 3 pinches, lemon food color
- ½ tsp, cumin seeds
- 5-6, fresh curry leaves
- 3-4, whole red chilies
- 1 tbsp, coriander leaves
- 50ml, cooking oil
How to Make Aloo ki Sabji Recipe?
- Heat the oil in a medium pan/pot over a low flame then
- Put cumin seeds, whole red chili, and curry leaves
- Crackle them for a few seconds on low flame
- Right after add tomatoes and green chilies
- Saute them for a minute on low flame then
- Add salt, red chili flakes, turmeric, crushed coriander powder, and nigella seeds along with little splashing water to prevent a burn from base
- Keep on stirring on a low flame
- keep on stirring by adding potato dice
- Roast them with spices for 2-3 minutes
- Once oil comes on top
- Then pour hot boiled water and stir to mix well
- Bring it to a boil and allow it to cook for around 10 to 12 minutes on low-medium flame or until the potatoes are soft
- After 12 minutes reduce the heat to low
- And mash the potato with a wooden spoon and mix well
- Simmer it for about 2-3 minutes on a very low flame
- Now Aloo sabzi is ready
- Transfer to the serving bowl/dish
- To serve with chapati, naan, paratha, and kachori
