Aloo Ki Bhujia | Aloo Sabzi | How to Make Aloo Ki Bhujia with step-by-step photos

Aloo Sabzi is a simple, easy tasty, and mildly spiced aloo sabzi, which can be served with puri or  kachori and paratha this is also a side dish at breakfast 
Basically, this is my own version once I did experiment with Aloo bhujia to bring a new taste to trust me this was superb, I often make it after my experiments, I enjoyed it with plain kachoriAloo ki sabzi or Bhujia you can adjust red chilies and salt according to your taste

Aloo ki Sabji is an all-time favorite basic sabzi recipe made with diced potatoes and is a simple recipe made with basic ingredients available at home, Aloo sabzi is liked by every Pakistani and this recipe goes well mainly with roti or chapatikachoriparatha, or rice. Potatoes are used most of the time to make various curries and this vegetable is liked by kids too.

Aloo is a great vegetable to make recipes for kids and pack for school tiffin boxes. This basic sabzi recipe with aloo is good to be eaten with roti and can be packed for lunch.

Aloo recipes made in all cities, and towns in Pakistan are slightly different according to their culture and taste 
Here I used some curry leaves, cumin, and whole red chilies for crackling the rest of the spices are a bit the same as tomatoes, green chilies, and basic powder spices
so let's begin

Take all ingredients and prepare all of them

      Heat the oil in a medium pan/pot over a low flame then put whole spices and Crackle them for a few seconds on low flame

      Right after put tomatoes and green chilies, saute them for a minute on low flame then add all the powder and spices along with splashing little water to prevent a burn from the base keep on stirring by adding potato dice

      Roast them with spices for 2-3 minutes_Once oil comes on top, then pour hot boiled water and stir to combine well

      Bring it to a boil then allow it to cook for around 10 to 12 minutes on low-medium flame or until the potatoes are soft

      After 12 minutes reduce the heat to low_And mash the potato with a wooden spoon and mix well

      Simmer it for about 2-3 minutes on a very low flame

      Now Aloo sabzi is ready, transfer it to the serving bowl/dish

        1. 300g, potatoes unpeeled and cut into slices
        2. 1 large, tomato peeled and cut into slices
        3. 6, small green chilies
        4. 1/3 tsp, nigella seeds
        5. 1 tsp, red chili flakes
        6. ½ tsp, turmeric
        7. 1 tsp, crushed coriander seeds 
        8. Salt to taste
        9. 3 pinches, lemon food color 
        10. ½ tsp, cumin seeds
        11. 5-6, fresh curry leaves
        12. 3-4, whole red chilies
        13. 1 tbsp, coriander leaves
        14. 50ml, cooking oil
        How to Make Aloo ki Sabji Recipe?
        1. Heat the oil in a medium pan/pot over a low flame then
        2. Put cumin seeds, whole red chili, and curry leaves
        3. Crackle them for a few seconds on low flame
        4. Right after add tomatoes and green chilies 
        5. Saute them for a minute on low flame then 
        6. Add salt, red chili flakes, turmeric, crushed coriander powder, and nigella seeds along with little splashing water to prevent a burn from base
        7. Keep on stirring on a low flame 
        8. keep on stirring by adding potato dice 
        9. Roast them with spices for 2-3 minutes
        10. Once oil comes on top
        11. Then pour hot boiled water and stir to mix well
        12. Bring it to a boil and allow it to cook for around 10 to 12 minutes on low-medium flame or until the potatoes are soft
        13. After 12 minutes reduce the heat to low
        14. And mash the potato with a wooden spoon and mix well
        15. Simmer it for about 2-3 minutes on a very low flame
        16. Now Aloo sabzi is ready 
        17. Transfer to the serving bowl/dish
        18. To serve with chapatinaanparatha, and kachori
