Kofta is a spicy, flavored, and delicious meatball based on thick gravy, a tasty, and mouth-watering traditional Meatball Curry with its perfect blend of rich and aromatic spices.
I am gonna share with all a traditional kofta recipe, probably you will have probably eaten and cooked kofta several times in your lives its preparation method is a bit different from other koftas because you neither add any poppy seeds nor roasted chickpeas
It is simply quite an easy and juicy meatball that my grandmother and mother used to cook, a unique and different recipe of kofta
Which main ingredients are added to this Kofta recipe?
The main ingredients are a bit amount of boiled chana dal, ground onions spices, and mince
I am using ground meat/mince you can use mutton and lamb as well additionally you can add boiled eggs as desired
Let’s go ahead to know how to cook it in a different way

Tips:
Firstly wash the mince under the running water in the strainer and keep it aside
Boil the chana dal
Peel and cut onions ginger and garlic
In the grinding jug add onion, ginger, and garlic, grind them into a smooth paste, and keep aside
Cut the ginger into thin slices
Chop coriander leaves and green chilies
In the chopper, mixture add ginger, coriander, and green chilies, grind them together coarsely, now add mince along with boiled chana dal, and chop them till turn to a smooth paste
Transfer to another bowl
Boil the water in the saucepan
In the pot heat the oil, add dried fenugreek seeds, and let it crackle for a minute
Now add onion paste to the oil, and cook onion paste on medium flame
Meantime take a small bowl to add yogurt and all dried ingredients except garam masala, Mix them well
Cook the onion paste until water dries up
Add Spiced yogurt mixed with onion paste, now stir to mix well then cover the lid
Allow to cook it over low-medium heat till the oil is separated, Reduce the heat to low
Now you can see the water has evaporated from the spice, once it started bubbling in the gravy take out 2 tbsp onion spices and add ground meat
Add some salt along with 2 tbsp oil to the ground meat
Mix them well and knead ground meat to a soft dough for 5 minutes until everything is incorporated
Apply some oil to the palm, and shape it into tennis sized ball
I made 10 medium-sized meatballs from 300g mince and placed them on the plate to make all meatballs
The gravy is looking thick, add 1 cup of boiled and hot water, and bring it to a boil
Place all meatballs in the gravy, and allow to cook meatballs, Just shake up the kofta curry with a rough cloth or kitchen towel
Cover the lid and allow to cook for 10-15 minutes over low-medium heat Add hot and boiled water, as much as you want to keep thick or thin gravy in the kofta curry
Bring it to a boil, now add green chilies, grated ginger, and basic garam masala
Then add coriander leaves fresh/frozen whatever you have available
Cover the lid, and keep simmering for around 15 minutes over very low heat
After 15 minutes turn off the heat, transfer to the serving bowl

Ingredients for Kofta Spice:
- 2 medium.onions
- The 1-inch piece, of ginger, chopped
- 3-4, garlic cloves peeled and chopped
- Salt to taste
- 1 tsp, red chili powder
- 1/3 tsp, turmeric powder
- ½ tsp, coriander powder
- ½ tsp, red chili flakes
- 1/2 tsp, dried fenugreek seeds
- ½ tsp, basic garam masala
- 3 tbsp, homemade yogurt beaten
- 1 tbsp, grated ginger
- 1 cup, of cooking oil
- 2 tbsp, fresh coriander leaves chopped
- 3-4 green chilies
- 300g, beef mince/ground meat
- 1 tbsp, chana dal boiled
- 3-4, green chilies
- ¼ cup, coriander leaves fresh/frozen
- 1-inch, ginger
- 1 tbsp, cooking oil
How to Make the Kofta Recipe?
- In the pot heat the oil
- Then add dried fenugreek seeds
- Let it crackle for a minute
- Now add onion garlic ginger paste
- Stir them well till the oil is separated
- Meanwhile in the small bowl add yogurt, red chili powder, turmeric, salt,garam masala, and coriander powder along with a little water
- Mix them together very well
- Then put the onion paste
- Let it cook until water has evaporated from the onion paste and is started bubbling on top
- Take 2 tbsp cooked onion spices,2 tbsp oil, and a bit of salt with yogurt
- Then add to the ground meat, mix them together
- Note: you can add onion spices according to the kofta meat quantity
- Knead the ground meat into a soft dough
- Note that oil and yogurt will keep soft and juicy meatballs
- Shape into a tennis-sized ball or as desired
- It depends on how you want to keep the size of the meatballs
- Place on the plate and keep aside
- Meantime add ¼ cup of water to the spice
- Bring it to a boil then place all meatballs in the onion spice
- Let it cook for 10 minutes covering the lid over medium-low heat till water dries out from the spice
- Note, don’t stir with a spoon while meatballs are cooking otherwise meatballs may be shredded
- Just shake up the pot with a kitchen towel
- Once the water dries up and the oil is separated
- You add I cup of the boiled and hot water to the pot
- How much you wanna keep the thick and thin gravy of kofta gravy it's up to you
- Bring it to a boil then add ginger slices, green chilies, and coriander leaves
- Allow to simmer for 15 minutes over a low flame
- At this stage you can add a boiled egg as desired I haven’t added eggs
- Now remove from the heat
- Transfer to the serving bowl
- Now kofta curry is served with rumali roti, chapati, naan, or bagara rice with salad or raita
- Note don’t use more salt in the kofta meat because, in the onion spice, we added salt as well
