Mixed Pickle is a spicy, tasty, and tangy instant veggie pickle prepared with some veggies and essential achar masala, when you heard the name of pickle immediately come to mind tangy and spicy flavor that can enhance the taste of your meal
Homemade pickle is much better than store-bought but the problem is people don’t have time to make or wait and typically pickle takes time to be prepared around 3-5 days 
under the sunlight, 

But here is I made instant veggie pickle, In which not to need more days waiting nor take more time to be ready, this is an instant mix veggie pickle that can reach within 30 minutes on your table, this pickle is cooked on the stove and ready within half an hour, other than you can add desirable veggies such as peas, cauliflower, beans, etc. it is a very easy and quick pickle recipe, it goes well with khichdi,dal chawal, and Shula

I added lemon, green chilies, garlic, onion along with carrot and reddish and some seasoning and mustard oil

Note: I always cooked and share with little amount quantity of recipe because we are only two family members because you can increase quantity and spices as needed
So let the go-ahead know how to make instant veggie pickle Achar instantly
Tips:
  1. For the best result mix veggies, pickles can be kept under the sunlight for 2 days
  2. This method will bring the complete flavor to pickle
  3. Can be used any brand of achar masala instead of as per given ingredients
  4. Mustard oil brings a real taste of achar so as not to avoid using it in a pickle

Firstly cook the mustard oil very well on high flame then keep aside, grind achar masala in grinding jar till turns into fine powder keep aside

Take all ingredients and prepare all veggies

In the medium pot/pot pour water and bring it to boil, then put all mixed veggies in the boiled water

Once it started boiling then add white vinegar
Now add the achar masala powder and other all dry spices too

Stir to mix well and bring to boil then cover the lid, and allow to cook it on a medium flame for 10-15 minutes till water has evaporated

Lastly pour cooked mustard oil into the mixed veggies, allow to simmer the veggie pickle for another 10 minutes until the oil is separated....

Transfer to the serving bowl/jar

Instant mix Veggies Pickle is spicy, tasty, and tangy instant veggie pickle prepares with some veggies and essential achar masala.....

Ingredients:
  1. 2 pieces, carrots
  2. 7-9 pieces, green chilies
  3. 8-10,garlic cloves
  4. 4-6 pieces, lemons
  5. 1 large, reddish
  6. 1 large, red onion
  7. 1 cup, white vinegar
  8. 150ml, mustard oil
  9. 1 tbsp, red chili flakes
  10. 1 tbsp, salt
  11. 1 tsp, turmeric powder
  12. 1 tsp, nigella (kalonji)
  13. 1/3 jug, water
For Achar Masala:
  1. 1 ½ tbsp, cumin seeds
  2. 1 tsp, mustard seeds
  3. 1 tbsp, coriander seeds
  4. ½ tsp, dried fenugreek seeds
  5. 1 tsp, fennel seeds
How to make the Mixed Pickle?
  1. In the medium pan/pot pour water and bring it to boil
  2. Put all mixed veggies like chopped onion, garlic, green chilies, lemon, reddish, and carrot in the water 
  3. Once started boiling
  4. Add spices such as white vinegar, ground achar masala, red chili flakes, nigella, turmeric powder, and salt
  5. Mix to combine well and further bring it to boil and cover the lid
  6. Cook all vegetables around 10-15 minutes until water has evaporated
  7. Then reduce the heat to low remove the lid and at this stage can adjust salt and spices 
  8.  Towards the end pour cooked mustard oil into the veggie pickle
  9. Stir to combine well
  10. Allow to simmer around 10-15 minutes on very low heat or until oil is separated 
  11. Transfer to the serving dish or bowl
