Dry roast all whole spices in a pan on medium-low flame for 2-3 minutes

Put all roasted whole spices in the grinding jar or mortar and grind it very well till turns to a fine powder

Transfer to another bowl now mix all spices powder with roasted ground spices mix them together till everything is incorporated

Take it out from the jar and transfer it to the bottle and paste the label with the spice name

Nihari masala powder is a collection of various spices, which are grounded into powder to give you the perfect traditional nihari flavor

Ingredients:
  1. 1 1/2 tbsp, red chili powder
  2. 1 tbsp, Kashmiri red chili powder
  3. 1 tsp, salt
  4. ½ tsp, citric acid
  5. 1 tsp, turmeric
  6. ½ tbsp,ginger powder / sonth 
Whole Spices:
  1. 1 tbsp, cumin seeds
  2. ½ tbsp, black peppercorn
  3. 1 tbsp, coriander seeds
  4. 2 medium, cinnamon stick
  5. 3, green cardamom
  6. 1 big, bay leaf
  7. ½ piece, nutmeg
  8. ½ tsp, mace
  9. 4 piece, cloves
  10. 2 small, black cardamom
  11. 2 pieces, long pepper (pipli)
  12. ½ tbsp, fennel seeds
How to make a Nihari Masala?
  1. Dry roast all whole spices black peppercorn, nutmeg, long pepper, black and green cardamom, fennel and cumin seeds, coriander seeds, bay leaf, cloves, and cinnamon sticks in a pan on medium-low flame for 2-3 minutes
  2. Put all roasted whole spices in the grinding jar, grind it very well till turns to a fine powder 
  3. Take it out from the jar and transfer it to another bowl and mix all powder spices red chili powder, Kashmiri red chili powder, salt, citric acid, ginger powder, and turmeric powder with the roasted ground spices
  4. Stir to mix them well
  5.  Now transfer to the bottle and paste the label with the spice name
  6. whenever you want to make nihari you can cook easily from homemade nihari masala 
  7. You can store it for up to a month by keeping it in the cool place
