Dry roast all whole spices in a pan on medium-low flame for 2-3 minutes

Ingredients:
- 1 1/2 tbsp, red chili powder
- 1 tbsp, Kashmiri red chili powder
- 1 tsp, salt
- ½ tsp, citric acid
- 1 tsp, turmeric
- ½ tbsp, ginger powder / sonth
Whole Spices:
- 1 tbsp, cumin seeds
- ½ tbsp, black peppercorn
- 1 tbsp, coriander seeds
- 2 medium, cinnamon sticks
- 3, green cardamom
- 1 big, bay leaf
- ½ piece, nutmeg
- ½ tsp, mace
- 4 pieces, cloves
- 2 small, black cardamom
- 2 pieces, long pepper (pipli)
- ½ tbsp, fennel seeds
How to make a Nihari Masala?
- Dry roast all whole spices black peppercorn, nutmeg, long pepper, black and green cardamom, fennel and cumin seeds, coriander seeds, bay leaf, cloves, and cinnamon sticks in a pan on medium-low flame for 2-3 minutes
- Put all roasted whole spices in the grinding jar, and grind it very well till turns to a fine powder
- Take it out from the jar and transfer it to another bowl and mix all powder spices red chili powder, Kashmiri red chili powder, salt, citric acid, ginger powder, and turmeric powder with the roasted ground spices
- Stir to mix them well
- Now transfer to the bottle and paste the label with the spice name
