Egg Fried Rice is rice. deceptively
simple, but a huge favorite and crowd-pleaser, I used cooked rice, and eggs along
with a few fried vegetables and then stir-fried in a wok or pan on high heat
quick and easy rice originally from Chinese Cuisine
This egg rice goes well with sweet and sour chili chicken whose recipe will share in my next post in addition this rice also can be served with chicken Manchurian, whose share recipe soon

you can use leftover boiled rice if have it in your fridge, but if you are cooking
freshly then must be cooked two hours before stir-fried,
But I
prefer never to make any type of fried rice from freshly cooked rice, it’ll
turn out to be a gobby mash because there is far too much moisture in
freshly cooked rice, I cooked egg rice by an easy method, which hardly took 20
minutes in cooking, so lets the go-ahead to know how to cook with step by step

To prepare this recipe first clean and soak the rice for an hour
Meanwhile finely chop the capsicum, carrot, and spring onion, grate the cabbage
Then fry them together in 1 tsp olive oil for 5 minutes on high-medium flame, keep aside until required, crush the black and white peppercorn set aside
Boil the rice in a large size pot and put them in a colander so that excess water could remove from the rice keep in an airy place and let it completely cool down
In the same pan put chopped garlic cloves and fry them for a minute on medium heat
Crack the eggs along with food of orange color
Sprinkle black peppercorn
Mix well eggs with spices
Keep mixing on medium flame till turns to scramble the texture
Now shift the fried vegetables to the scrambled eggs
Give them to good stir on a medium-low flame
Add cooked rice along with soya sauce to the pan
Put crushed peppers on rice
Start to now mixing on a high-medium flame
Keep mixing by adding salt
Constantly keep mixing rice with egg mixture till turns everything is incorporated
Transfer to the serving dish/plate, egg fried rice is ready to serve with shashlik, sweet and sour chicken chilies

Ingredients:
- 400g, boiled rice
- 2 tbsp, olive oil
- Salt to taste
- 1 tbsp, soya sauce
- ½ tsp, white peppercorn crushed
- ½ tsp, black peppercorn freshly crushed
For Scrambled eggs:
- 2-3 large, sized eggs
- 2 pinch, orange food color
- 2 tbsp, olive oil
- 1/5 tsp, salt
- ½ tsp, black peppercorn crushed
For Vegetables:
- 1 medium-sized, capsicum chopped
- 1 medium-sized, carrot chopped
- 1/6 cup, cabbage grated
- 1/5 cup, spring onion green part chopped
- 2-3, garlic cloves freshly chopped
How to make Egg-Fried Rice?
- Heat the oil in the same wok which has fried vegetables
- Put chopped garlic cloves and fry them for a minute then crack the eggs into the oil and add food color, salt, and crushed black peppercorn mix them well
- Cook the egg on low-medium heat till turns to a scrambled texture
- Put fried vegetables in scrambled eggs then stir to mix them well
- Add cooked rice to the wok along with soya sauce, salt, white and black peppercorn
- Give it to good stir to mix on high flame for 5 minutes
- Transfer to the serving plate/dish
- Egg-fried rice is ready to serve with shashlik and sweet and sour chicken chili
