Chicken Jalfrezi is a tomato-based curry with boneless
chicken pieces, bell peppers, and onion. Unlike most traditional curries,
Jalfrezi is often stir-fried instead of stewed or braised. This lends it a
thick, semi-dry texture instead of a soupy one like that of Classic Chicken
Curry.
Here I have also prepared chili garlic rice to serve with chicken
jalfrezi. A lip-smacking and flavored chicken jalfrezi with chili garlic fried
rice, along with chilled soft drinks, will make your day. Try this ๐

Though I have shared the
chicken jalfrezi recipe initially in my blog post and this recipe is 2nd
version of jalfrezi with video and chili garlic fried rice
What exactly is Chicken Jalfrezi?
Chicken Jalfrezi is a
chicken curry made with traditional onion and tomato masala. It is
characterized by including large, cubed pieces of capsicum (bell pepper)
added towards the end of the cooking time, so they keep their color and bite.
Some versions of Chicken Jalfrezi also add large pieces of onion, but my recipe
doesn’t.
What sets a Chicken
Jalfrezi apart from other regular curries is the slightly tangy addition of
vinegar at the end, which makes it rather reminiscent of more Indo-Chinese
style curries such as Chicken Manchurian.
I also made chili garlic fried rice to go with the chicken jalfrezi. This rice is quick and simple to prepare and can be made in just 10 minutes using leftover boiled rice.
This recipe can assist you in creating dishes of restaurant quality, and with the help of my tips, you can even customize it to achieve a restaurant-style dish.
TIPS:
If you are using fresh, homemade tomato puree, consider adding a tablespoon of tomato ketchup or 2 tablespoons of tomato paste to enhance the flavor and impart an umami taste.
For fried rice, it is best to use leftover, cold-boiled rice to achieve an awesome result without any sticky rice grains or breakages. In case you do not have leftover boiled rice, you can boil the rice for 5 hours before cooking and refrigerate it until completely cool before using it in the recipe.

How to prepare Chicken Jalfrezi served with Chili Garlic Rice?
To begin, cut the onions, bell peppers, and tomatoes into square-shaped pieces. Make sure to remove the seeds from the tomatoes.
First, finely chop the garlic.
Then, cut the boneless chicken into bite-sized cubes.
Peel and slice the carrots and capsicums into thin, long pieces.
Lastly, cut the green chilies into thin, long strips.
In a wok or pan, heat 1 tablespoon of olive oil. Add the onions and capsicums and sautรฉ for 2-3 minutes. Once done, remove from the heat.
In a wok or pan, add oil and heat it up. Then, add chopped garlic and let it cook for a minute. Next, add chicken cubes and fry them with the garlic until the pink color disappears.
Once the chicken turns white, add spices such as salt, chili flakes, crushed coriander, turmeric powder, and crushed black pepper. Stir everything together to ensure it is well-mixed.
Next, add a small amount of garam masala mix to the dish. Then, include the tomato puree. If you need the recipe for the TOMATO PUREE, it is available in my previous blog post. Simply click the link to access it.
To make the chicken tender, add spices and stir on medium-low flame before pouring in water. Once it boils, cover and cook on a medium flame for 15 minutes.
Remove the lid and add sautรฉed veggies, mixing well. Finally, add tomato cubes and combine them with the chicken masala and veggies.
At the end of the cooking process, cover the dish and let it simmer over a low flame for approximately 5 minutes. Be sure to keep the flame very low,
as too much heat can cause the chicken jalfrezi to become dry. After 5 minutes, add julienne ginger and allow it to simmer for an additional 3 minutes.
To prepare the chili fried rice, heat some oil in a separate pan or wok. Sesame oil works best for cooking fried rice, but you can use olive oil if you prefer. Add chopped garlic and fry for a minute.
Then add thin slices of carrot and sautรฉ with garlic for another minute.
Next, add, long thin capsicum and sautรฉ it for another minute. Once cooked, set the vegetables aside.
Crack an egg in the pan next to the sautรฉed
ve, then add, sprinkle some salt and white pepper over the egg. Then, use a spatula to crumble the egg before adding long, thin green chilies.
Mix everything together before adding boiled, cold rice and mixing it with the masala.
Finally, add boiled rice, oyster sauce, and salt, and keep mixing everything over a medium-high flame.
Before serving, taste the rice and adjust the level of spices as necessary. Continue to stir-fry the rice over high heat for another 2-3 minutes. Once done, your chili fried rice is ready.
Transfer your chicken jalfrezi and fried rice onto a serving bowl and plate.e

I usually prepare it with leftover boiled rice, personally, I love to have fried rice whenever I have leftover rice in my fridge I plan to make this wonderful and wholesome rice I do variations with prawns, ever with fish,
And sometimes when I haven’t any type of meat then use eggs and fried mixed vegetables which are always available in my fridge.
This is a quick and instant rice dish however you should have available related ingredients in your fridge so very easy and quick.
Take all ingredients and prepare all veggies for ric.e
Take one saucepan to pour half a cup of water or add chicken pieces along with ginger garlic paste, vinegar, and salt bring it to a boil on high flame then cover the lid and reduce the flame to low-medium
Cook chicken until meat is tender, If water remains then turn the flame on high until the water dries out, Shred the chicken and keep aside.
Take one large-sized pot/pan pour1 literr water in the pot add salt bring to a boil then add rice and white vinegar stir well cook rice till turns fully cooked.
Drain the rice out from the water and set it aside until required Note: boil the rice two hours before cooking while preparing biryani or fried rice
Note: you can use leftover boiled rice as well
Beat the egg with salt, food color, and black pepper, heat the oil in a pan, and pour the egg mixture into the pan, scramble the egg into small chunks.
Remove from the flame shift to the plate then keep aside.
Now heat oil in a wok/pan add chopped garlic fry till turns to a light golden brown. Add all ingredients and fry on high flame for 2 minutes.
Then add eggs and spring onion fry them for a second then add sauces with salt beside the boiled rice, stir to mix well on high flame for a minute.
Transfer to the serving dish/tray, now ready to hot Serve

Usually, people prepare chow mein with
spaghetti/noodles but here I made some changes to this recipe and cook in my
style_firstly I didn’t use ketchup as I don’t like using it in chow mein or any other type of Chinese cooking secondly I
cooked chow mein with pasta instead of noodles or spaghetti
This will likely become one of your go-to dinner
recipes because it's very easy to make yet it tastes so good besides a wholesome
recipe
A big bowl of homemade chicken chow mein is way
more satisfying and can be made with ease_tender pieces of chicken breast are
marinated in salt, black pepper, cornflour, and white egg and then deep-fried
until lightly browned_to add some crunch and a colorful combination of chopped
vegetables like carrots, cabbage, spring onion, green or red capsicum are added, an
authentic savory sauce coats each chewy Italian pasta for an irresistible dish

Meat: I used broiler chicken
breast but the best part of the chicken is thigh meat that is also tender and
juicy_i prefer using thigh instead of breast
Veggies: green cabbage, carrot, spring
onion, and capsicum are added to the recipe but you can use any other veggies of
your choice like peas, yellow and red pepper, purple cabbage, and beans
Sauces: red chili sauce, soya
sauce, white vinegar, Worcestershire
sauce along with sesame oil which is the main ingredient of this recipe_adding
sauce of your choice is up to you
I skipped adding ketchup and alternatively, added
chili sauce in my recipe as I understand red chili sauce can enhance the
taste of chow mein rather than ketchup
Ketchup is considered the main ingredient of
the recipe alternatively can be used as chili sauce or garlic sauce as well
Spices: I used black
pepper, salt, cornflour, white pepper, and chicken powder_you can use red chili
flakes too if you are a spice lover
Chowmein
noodles: this recipe can be used in many verities of noodles, spaghetti, egg noodles, Italian
pasta, or macarons as well
I used Italian pasta in the recipe
Tips For Cooking:
I cook the chicken first in hot oil to
create a lightly golden surface. The meat also gets an extra layer of texture
from the small amount of cornstarch added to the marinade. The lean poultry cooks
in just a few minutes and then gets transferred to a plate so it doesn’t
dry out.
What Vegetables Go in Chow Mein:
Adding nutritious vegetables brings vibrant colors to the dish and more texture
contrast. The cabbage, carrots, capsicum, and onions are sliced thin so they cook
quickly and blend in nicely with everything

To make this recipe firstly marinate the chicken
pieces rinse the chicken breast thoroughly and then cut it into strips and
put it in the bowl
Marinate the cut pieces of chicken in a few
spices to infuse flavor onto the surface of the protein for added flavor_Add cornflour, salt, black pepper, and white egg to the chicken
Stir to combine well and keep in the fridge for 30 minutes for marination
Boil the water with 1 tsp salt and 2 tbsp oil in
a large-sized pot_Bring it to a boil then put the pasta in the water and
cook for around 7-8 minutes on the high-medium flame_Drain the pasta onto the colander then set aside
Chop the veggies lengthwise
Heat the oil in the wok and fry marinated
chicken strips until evenly light brown_Drain the fried chicken strips on the plate
Set
aside, Once all the ingredients are cut, fried, and ready to go, it’s time to stir-fry!
Heat the oil and add chopped ginger-garlic to
the oil_Fry them for a minute on medium flame. Put chopped cabbage, carrots, and capsicum into the oil and sautรฉ them together for 1-2
minutes on the high-medium flame
Then add half the quantity of spring onion and
further, keep on stirring by adding green chilies slices. Stir-fried veggies hardly will take 3-4 minutes
Now lower the flame to low and start adding
spices to the veggies such as black and white pepper, salt, and chicken powder
Keep on stirring further for a minute then put
fried chicken strips
Keep mixing by adding soya sauce, chili sauce, Worcestershire
sauce, and white vinegar
Add sesame oil along with remaining green onion_Keep on stirring for 1-2 minutes on the high-medium
flame
Turn off the flame and remove it from the stove
Chicken chow mein is ready to serve. Transfer to the serving plate/dish
