Stuffed Dates Simply made by stuffing fresh dates with a mixture of nuts and honey and dipping them in chocolate fudge, These little bites are perfect as a healthy snack or as a sweet treat to end the meal. These will also be good as dessert.
I received these wonderful dates to try.
Mainly my experience growing up was dates in a hard block, date squares (which I still love) and that was about it. Later in life, I have come to love, appreciate, and cook a lot more with dates, but never have I seen such big, beautiful, glorious Medjool dates as these from natural delight.
I have stuffed dates coated with chocolate like these Sweet Or, a more traditional approach with Maple-Date Bars, another huge hit! Biting into one of these beauties is a treat on its own, they are so sweet and only slightly chewy as they almost melt in your mouth.
They are huge with wonderfully shiny skins. Instantly I wanted to stuff them with something a bit spicy to meld with that sweet chocolate flavor, so let's begin.

Make a slit in each date lengthwise extract the seed from the dates, and repeat the same process with all remaining dates.
Coarsely chop the nuts.
In a small bowl, combine the nuts with enough honey.
Just to hold together.
Melt the chocolate in a double-boiler or in a microwave until melted and smooth.
Add cream with melted chocolate.
Mix them together well, chocolate fudge is ready.
And remove the pit. Stuff the dates with the nut mixture. keep aside
Dip each stuffed date into chocolate fudge with a fork or spoon until fully coated, and shake off excess chocolate.
Place dates on a wax paper or foil-lined baking sheet /plate.
Keep them in the refrigerator and chill them until the chocolate sets.
Serve at room temperature or refrigerate until needed.

- 15-18 pcs, fresh dates
- 3-4 tbsp, honey
- 15-20 pcs, almonds
- 50g, dark chocolate
- 3-4 tbsp, heavy cream
