Bottle Gourd Curry is a tasty and healthy gravy recipe made with bottle gourd(lauki)and Bengal gram(chana dal)this is a very simple, quick, and easy delicious veggie dish that is served with boiled rice, Rotis, and bagara rice
To make this recipe, I recommend t0 soak chana dal for at least an hour, I make this lauki chana dal in a pot but you can make it in a pressure cooker, I usually make this recipe spicy by adding more red chilies and special garam masala, but you can keep less spicy or mildly spiced curry to taste
Lauki was the favorite veggie of Our Beloved Prophet (PBUH) because this is also sunnah to eat
To cook this dish I used the traditional spices which are used by my mother.in various styles to cook this veggie dish some people put tomatoes green chilies etc but I didn’t use all these very healthy and delicious lauki chana dal is prepared with very few spices, let's go ahead to know how to make lauki chana dal dish with step by step photos...
Tips:
- To prepare this dish you use a small and young bottle of gourd
- As well as you can use the skin of the gourd to make lauki kebabs
- Don’t use lauki which has lots of seeds
- Don’t leave lauki by peeling off
- After peeling the Loki always put it in the water to prevent blackishly
- Well-roasting is an important part of Pakistani cooking

Firstly rinse and soak the chana dal in the hot water for an hour, Peel and chop the bottle gourd into small pieces and put in the water bowl, Peel and coarsely chop the onion
Boil chana dal in the pot/saucepan and add ¼ tsp turmeric powder mix well, remove the scums on top of the chana dal, and cook it until the dal is soft, And finely crush the black peppercorn and brown cardamom together
Heat the oil in the pot and put dried fenugreek seeds, let them crackle for a minute then add onions slices, saute the onion for 4-5 minutes then add ginger garlic paste and stir for a minute
Dissolve the all spices powder in a little water and mix well, then add the dissolved spices to the pot and mix well again over low-medium flame
Roast the spices until oil is separated, then put bottle gourd, roast the lauki with spices very well for 5 minutes over medium flame
After 5 minutes add boiled chana dal to the lauki, stir well until oil comes on top then add crushed spices
Stir to well combine until oil is separated, pour hot and boiled water, bring it to a boil then allow to cook another 10 minutes over the low-medium flame, keep stirring occasionally
Once cooks properly simmer it for 5 minutes over very low heat
Lauki chana dal is done to serve

Ingredients:
- 400g, guard lauki
- 1, large onion
- 1 tsp, ginger garlic paste
- 1 tsp, red chili powder
- ½ tsp, crushed red chili
- 1 tsp, crushed coriander powder
- ½ tsp, turmeric powder
- Salt to taste
- ¼, dried fenugreek seeds
- 1 ½ cups, chana dal
- 1 cup, of cooking oil
- ½ tsp, black peppercorn
- 2, brown cardamom
How to Make Lauki Dal?
- Heat the oil in the pot and put dried fenugreek seeds
- Let them crackle for a few seconds then add onions slices
- Sauté them for 4-5 minutes then add fresh ginger garlic paste
- Fry well with the onion over a medium-low flame
- On a plate combine all dry spices powdered red chili, crushed red chili, salt, crushed coriander, turmeric powder
- Add little water to make a smooth paste
- Now put spices paste to the onion and stir well until the oil is separated
- Then add chopped lauki to the cooked spices and stir to mix them well
- Once they are roasted very well with the spices
- Pour boiled chana dal and mix again then add crushed black powder and adjust salt at this stage
- Stir to combine till oil comes on top of the surface
- Now add 1 cup of hot and boiled water
- Bring it to a boil and cover the lid
- Allow cooking another 10 minutes over medium heat
- Right after reducing the heat and simmer it for 5 minutes
- Note: depends on how much you want to keep thick/thin gravy in the dish
- Now lauki chana dal is ready to serve
- Lauki chana dal usually is served with boiled rice, pickle, and salad with rotis and naan.
