and so easy to make you can’t go wrong with a big warm bowl of vegetable soup.
This vegetable soup is made from a variety of veggies. typically carrots, tomatoes, celery, cabbage, and beans I also added broccoli and green chilies for spiciness in the soup. while you can add veggies of your choice.
Mainly vegetable stock is used in the vegetable soup but I added chicken stock to make it more healthy and tasty. However, if you are vegetarian then can skip chicken stock
This recipe you’ll want to add to your dinner or lunch yields a pot full and makes great leftovers. This soup works also for diet purposes.

Adding extra flavor, herbs, and spices to add
This soup has a mild seasoning blend to it which I prefer (because it lets the flavor of the vegetable shine) but you can definitely add more herb flavor or spices to taste.

In the pot pour the water and combine chicken pieces, chopped ginger garlic, chopped onion
Add coriander seeds, black
peppercorns, chopped tomato, and salt.
Stir to mix well and bring it to a boil on
the high-flame
Cover with the lid and allow to cook for
around an hour
Meanwhile, prepare all veggies
Steam them together in the steamer
for 30 minutes. Steam will help to make soft veggies
Once the stock is done strain it
Boil the stock again very well and add
steamed vegetables into the pot
Next, add black pepper, white pepper, chopped
green chilies, and fresh lemon juice to the stock
Give
them a good stir
Now
add soya sauce, sugar, and hot chili sauce to the soup
Further, stir
to combine well
Cover
it and let it cook for about 15 minutes on low-medium flame
Remove the lid and add dissolved
cornstarch to the soup to give it a bit of thickness
In the end, put chopped green spring
onion into the soup and mix up
Vegetable soup is ready to serve

For Chicken Stock:
- 250g, chicken with bones
- 1 tbsp, chopped ginger
- 1 tbsp, chopped garlic
- 1 tbsp, coriander seeds
- ½ tsp, black peppercorns
- 1 large-size, tomato chopped
- ½ tsp, salt
- 1-25 liter, water
For Veggies:
- 1/3 cup, peas
- 1/2 cup, grated cabbage
- 1 cup, of broccoli
- 3-4 pcs, green chilies chopped
- ½ cup, white spring onion
- 1 pcs, capsicum
- 1 medium-sized, onion
- ¼ cup, green spring onion
- 1 ½ cups, carrots
For Seasoning:
- 1/3 tsp, black pepper powder
- ½ tsp, white pepper
- 2 lemon wedges, freshly squeezed
- 1 tbsp, soya sauce
- 1 tbsp, hot chili sauce
- 1 tbsp, white vinegar
- 2 tbsp, cornstarch
- 1 tsp, sugar
How to make Vegetable Soup?
