How to Make Homemade Kaleji Masala?
Combine coriander seeds, black peppercorns, cumin seeds, dry red chilies, garlic cloves, dry papaya, kasuri methi, dry ginger, cinnamon stick, and black cardamom in a pan.
Next, dry roast the spices over low heat for 5 minutes to remove moisture without browning.
Grind all roasted spices coarsely
Don't grind in a powder form
Once the spices are ground add Kashmiri red chili powder
turmeric powder, and lemon salt.mix them very well
Now masala powder is ready to use in recipes, store it in an airtight jar for 2-3 months

- Ingredients For Roasted Spices:
- 32g, coriander seeds
- 8g, cumin seeds
- 10g, black peppercorns
- 2 pods, brown cardamoms
- 10g, dry papaya
- 1 1/2 inch, cinnamon stick
- 10g, garlic cloves unpeeled
- 10g, dry ginger
- 16g, dry red chilies
Powder spices:
- 5g, lemon salt
- 1/2 tsp, Kashmiri red chili powder
- 5g, turmeric powder
How to Make Homemade Kaleji Masala?
