Besan ka Halwa is a traditional, rich Punjabi sweet dessert that is a favorite for any type of celebration. Besan or Gram Flour made from chickpeas is used extensively for its health and beauty properties, many of you have probably used it externally since besan is a great exfoliant. It has great benefits too when taken internally. The flour aids indigestion.
This recipe combines ghee, eggs, and milk When consumed during fasts it can satiate hunger for many hours. Besan halwa is also given during pregnancy and besan ka halwa for cold is a sure-shot remedy to cure the severe cold. I make it besan halwa in the shape of a kali you can as desired give it to shape or retain a plain texture it’s up to you, So let the go-ahead to know how to make it

First, we sift the besan into the medium bowl set aside
If you haven’t powdered sugar you can just grind it in the food processor
To
prepare the egg-sugar mixture we will take any kind of mug to crack the eggs in the
mug and whisk them well, then add powdered sugar
Whisk well until sugar is dissolved
Pour milk into the egg mixture then whisk to combine well then add kewra essence further stir well then set aside, prepare all dry fruits and green cardamom
Grease the tray with ghee and set it aside
Heat the ghee in the pan/wok and put besan in the pan
Roast it with ghee over a low-medium flame, after 2-3 minutes add green cardamom powder
Keep on stirring halwa on medium-low flame until changes its color, once it turns to light brown reduce the heat to low
It turns to a rainy texture, then pours the egg-sugar mixture into the besan and stirs to combine well
Till turns to dough texture and leave the base from the bottom
Transfer to the tray and spread it evenly with a spatula, sprinkle crushed dry fruits on besan halwa
Place the chandi war on halwa and cut into the desired shape, leave it for 1-2 hours in an open-air place then can be stored in the container for up to 2 weeks

Ingredients:
- 250g, gram flour (besan)
- 70-80g, powdered sugar (regular sugar)
- ½ cup, of milk
- 1 cup, of desi ghee/regular ghee
- 3-4 pods, of green cardamom powder
- 25g, almond chopped
- 25g, pistachio chopped
- 3 large-sized eggs whisked
- 2 drops, of kewra essence
- Edible silver paper optional
How to Make Besan Ka Halwa ?
- Heat the ghee in a wok/pan over medium flame, and add gram flour to the pan
- Reduce the flame to low-medium then start roasting it with ghee
- Then add green cardamom powder
- Keep on stirring on medium flame till turns to lightly brown around 10-12 minutes or depending on the gram flour quality
- You will see gram flour is getting liquid form during roasting but don’t worry mainly it happens by default at this stage immediately pour the egg-sugar mixture without delay and keep the flame low-medium to prevent burning
- Keep mixing by pouring the egg-sugar mixture on a medium flame
- Continuously keep stirring to prevent making lumps
- When you add egg mixture you will see instantly they start coming in the dough form
- Just at this stage turn off the flame and spread it on the greased tray
- Evenly press it with a spatula or wooden flat spoon from all four sides
- Sprinkle almond and pistachio powder over halwa
- At this stage place the silver edible paper and cut it to the desired shape whether it be a diamond or square shape
- I cut it into a square shape
- Transfer to the serving plate/dish and serve hot with tea
- You can store it for more than 1-2 weeks in the winter season but in summer will have to store it in the refrigerator
- Besan halwa is ready to serve.....
