Tips to Make Perfect Crispy Fries:

Potatoes are full of starch; the reason they quickly become soggy after frying is that flour/cornflour is used to make them crisp and crunchy

But if you rinse the potatoes under running water until starch is removed and soak them in chilled water for 30 minutes, you will see a crispy look from the outside after frying, even if you don’t use any type of flour, it ii becomes crispy 

 2nd tip is to take the potatoes out of the water and pat them dry. This method prevents absorbing the oil in the potato while frying.

#3rd tip is to flesh-fry the potatoes in medium-hot oil for five minutes and then drain them. This method makes potatoes extra crispy and crunchy

But in this recipe, you can directly fry the potatoes by skipping 3rd tip since we are using flour and egg, which work in the recipe as binding agent, so no need to flash fry. But I have shown in my recipe flash fry step that I used egg and flour batter. This is to just tell my viewers and readers.

Meantime, combine all ingredients: egg, chaat masala powder, garlic powder, chicken powder, mustard paste, and all-purpose flour into a small bowl, and beat them well until everything is incorporated.

Ingredients:

  1. 750g, red potato/unsweetened potatoes
  2. ½ cup of cornflour
  3. 1/3 cup rice flour
  4. ½ liter of oil, for frying or as required

For Egg Mixture:

  1. 1 nos, egg
  2. 1 tsp, homemade chaat masala
  3. 1/ tsp, garlic powder
  4. 1/3 ts, chicken powder
  5. ¼ tsp, mustard powder
  6. 1.25 tbsp, all-purpose flour

How to make Egg French Fries?

Peel Cut and Dry Potatoes: Peel and cut the potatoes into 1.5-inch thick long strips. Put them into the chilled water for a while. Next, take them out and pat them dry
