Kulcha Cookies || Cookies Recipe || How to make kulcha cookies with step-by-step photos 

Kulch cookies are my family’s  Recipe, You will not have heard about this recipe, I make cookies from our culture, my mom used to make a lot of these and we would finish them so quickly, my mom was not a baking kind of person but she always used to make these with the help of my elder sister.

Kulcha is crispy outside and buttery and chewy inside they are from Bihar, India. Mostly only found in the "Bihari" household never seen them being sold in the market outside of Karachi Pakistan.
I usually prepare these cookies for snack purposes, to serve to the guests, alongside removing timeless hunger.
Note:
Baking time depends on your oven temperature

Take a big bowl and sieve the flour, semolina, baking powder, salt, and icing sugar and mix them well. On the Other hand, take another small bowl to add melted ghee/butter and beaten egg, and beat it with a whisk until well combined.

Now pour all the ghee/butter and egg mixture into the dry ingredients and mix it well until it turns into a crumbly texture.



    Then start to knead the hard dough with a little water.r 



    Transfer the dough to a broad Surface/slab and knead it with the help of your palm Put it in another bowl, cover it with plastic wrap for 30 Minutes, and set aside.


    Take out the Dough, ball punch it again for 1 minute, roll out the cookie dough around 1-inch thick oval/round, then gather the remaining dough and repeat the same procedure, roll out and cut. 


      Now, take the cookie cutter and Cut Out the Cookies from the dough.h





      Now, place all cookies on the Baking tray
      Brush cookies with jaggery and milk mixture, sprinkle some sesame and nigella over cookies, and bake them for 20 to 30 minutes at 200 °C until golden brown in color.





      Kulcha cookies are served with tea and coffee

        ingredients:
        1. 2 cups  of all-purpose flour
        2. ½ cup  of semolina
        3. 2 tbsp  icing sugar
        4. ½ tsp, alt
        5. 1/3 tsp  baking powder
        6. 2/3 cup, ghee/butter melted
        7. 1 large, beaten egg
        8. As required, jaggery/brown sugar dissolved in some milk for brushing on cookies
        9. As required, sesame seeds/nigella for sprinkling cookies
        10. Preheat oven to 230 °C or g°Cs mark 5 for ½ hour
        11. Place a baking paper on the baking tray
        How to Make the Kulcha
        1. Take a big bowl and sieve the flour, semolina, baking powder, salt, and icing sugar. Mix them.

        3. Now pour all/butter and egg mixture into the dry ingredients and mix it well until it turns into a crumbly foam
        4. Then start to knead the hard dough with a little water
        5. Transfer the dough to a broad Surface/slab and knead it with the help of your palm Put it in another bowl cover i,t with plastic wrap for 30 Minutes, and set it aside.
        6. Take out the Dough ball and punch it again for 1 minute
        7. Roll  out the cookie dough around 1-inch thick oval/round
        8. Then  gather the remaining dough and repeat the same procedure
        9. Roll out and  cutting
        10. Now take the cookie cutter and Cut Out the Cookies from the dough
        11. Now, place all cookies on the Baking tray
        12. Brush oookies with a jaggery and milk mixture
        13. Sprinkle sesame and nigella over the cookies
        14. Bake it for 20 to 30 minutes at 200 °C until°golden brown color
