Murgh Cholay Masala Powder | Cholay Spices  is a aromatic and flavoured  blend of different spices that helps to enhance the taste of murgh cholay,i did try a lot to make perfect spice of this recipe ,but unfortunately every time i have to  face unsuccessful attempt,couldn't bring its actual flavour and taste
Then one day i thought why do i not add black salt instead of salt,so i acted upon my thinking and then again try trust me which i could not getting for a long time despite of trying a lot,this time i achieve easily just due to skip the regular salt from this recipe,then i realized not to achieve actual flavour was due to sharpness of salt,one more experience i got is that should not use regular salt in chana whether are whatever making from chana,remember always perfection comes from practice and experience,you can't get experience without experiments

Additionally this spice can be used in many recipes which are related with cholay (chickpeas)such as cholay ande chikar cholay,cholay aloo etc,i am preparing murgh cholay masala powder for 2-3 kg chicken and chickpeas you can use as needed or to taste,this is my own version rarely you could found in market,i cooked cholay from this spice amazing taste and flavour that's why now i am sharing with all :)

We need:


    Preparation of murgh cholay masala powder:
    Firstly put all whole dry ingredients to the pan,dry roast them for a minute


    Put all roasted spices in the grinding jar
    grind them well for 3-4 minutes


      Transfer to the bowl,combine all powder spices to the roasted spices powder,further mix them well


        Now murgh cholay spice powder is ready to use in the recipes,can be stored it in the airtight jar or bottle


          How to make recipe?

          1. 1 tbsp,red chilli powder
          2. 1 tbsp,kashmiri red chilli powder
          3. 1 tsp,turmeric powder
          4. 1 tsp,black salt
          5. ½ tsp,garlic powder
          6. ½ tsp,ginger powder
          7. 1/2 tsp,dried fenugreek leaves 
          8. 1/4 tsp,citric acid 
          9. ½ tsp,baking soda
          Whole roasted spices:
          1. 2 tbsp,coriander seeds
          2. 1 tbsp,cumin seeds
          3. 1 tbsp,black peppercorn
          4. 1/3 tsp,fennel seeds
          5. 1,bay leaf
          6. 1 brown cardamom
          7. 2,cloves
          8. 1 inch, cinnamon stick
          1. In a pan add cumin seeds,cardamom,coriander seed,cloves,fennel seeds,black peppercorn,bay leaf and cinnamon stick
          2. Dry roast them for a minute over medium-low heat
          3. Put them in the grinder jar
          4. Grind them until fine powder
          5. Transfer to the bowl/plate
          6. Then add garlic and ginger powder
          7. Stir to mix them
          8. Right after add red chilli powder,kashmiri red chilli,turmeric powder,baking soda,black salt,dried fenugreek leaves and citric acid
          9. Stir to mix them until everything is incorporated
          10. Store in the airtight jar or any container by keeping on the cool place
