White Zarda Recipe


Zarda rice | Sweet rice is a Pakistani traditional sweet dish, which is a must for every occasion it is easy to make and consists of simple ingredients rather than rich and calorie ingredients, this white zerda is made by boiling rice with orange food coloring and sugar flavored with cardamom raisin, saffron pistachio, and almond

But here I did some variations in zerda, it looks a bit different from traditional orange zerda, additional I added green and red coloring along with homemade khoya and ashrafian that you find any local shop or store, if it is hard to find out then you can use tutty fruity instead of Ashrafi and skip a few ingredients like raisin and saffron
Additionally, you can also garnish it with small gulab jamun and cham cham so lets go-ahead for preparation

Recipe tips:
  1. To prepare zarda rice conveniently is using sella rice rather than basmati rice
  2. At the time of serving garnish zerda with small-sized gulab jamun and cham cham sweets along with khoya and dry fruits
  3. Can be eaten for 3-4 days by keeping in the refrigerator...
  4. if you are using sella rice then you have to cook the rice completely 100% otherwise your rice will become hard after putting in sugar syrup
  5. If you want to make orange or yellow zarda at the time of boiling add a pinch of food color

We Need:


Preparation of white zarda rice:

To prepare zarda rice first thoroughly wash and soak the rice in hot water, boil the water in a pan and put dry fruits to the hot water and let them remain in hot water for 5 minutes
Then remove the skin and cut into the half set aside


In a saucepan pour 3 cups water, green cardamom along with sugar bring it to boil
Keep on stirring on medium heat until sugar is dissolved and syrup becomes a bit thicken
Remove from the heat 
Coarsely chop the ashrafian set aside
Prepare homemade khoya according to my recipe I have given a link to the list below
If easily available in your area can be used store-bought khoya.


Cook rice:
In a large pot pour water along with green cardamom, bring to boil and cover the lid, put rice in the water, stir well and allow to cook it till rice is soft


Drain them out from the water and keep aside


Making white zarda:
Heat the ghee and put cloves and cardamom let them crackle, pour sugar syrup to the ghee


Then add rice to the sugar syrup and stir to mix well alongside put Ashrafi to the rice and further stir to combine well


Keep on sitting by adding half quantity of khoya and dry fruits half reserve for using garnishing, then sprinkle food colors at one side


Towards the end add kewra essence, coconut powder, and remaining khoya and dry fruits over rice, allow to simmer it for 10-15 minutes on  low flame


Zarda rice is ready, transfer to the serving tray/dish

Serve hot zarda rice of your family and friends 

This white zerda is made by boiling rice with orange food coloring and sugar flavored with cardamom raisin, saffron pistachio and almond

  1. 3 cups,sella basmati soaked at least 3 hours in hot water   
  2. 150g, instant khoya
  3. 50g, almonds
  4. 50g,pistachio
  5. 50g, coconut powder
  6. 4-5 drops, kewra essence
  7. 1 cups, Ashrafi/tote fruity
  8. 4-5 pinches, green color
  9. 4-5 pinches, red color
  10. 5 pods, green cardamom
  11. 2, cloves
  12. ½ cup, ghee/basmati ghee
  13. 2 pinches, saffron optional
For sugar syrup:
  1. 250g, sugar or to taste
  2. 2 pods, green cardamom
  3. 3 cups, water
  1. In a large capacity, pot pour 1-liter water and green cardamom with 2 pinches saffron
  2. Bring it to boil and then put soaked and drained rice to the boiling water stir well
  3. Let it cook till turns to soft drain them out through colander keep aside
  4. Heat the ghee in the large separate pot right after put cloves and green cardamom
  5. Let them crackle then reduce the heat to low-medium pour prepared sugar syrup in the ghee
  6. Add boiled rice and stir to mix well keep flame to low
  7. Keep stirring by adding other ingredients ashrafian,1/2 khoya, and half pistachio along with almonds
  8. Now put green and red food colors, kewra essence, coconut powder,remaining khoya, almonds and pistachio
  9. Allow to simmer it about 15 minutes on low flame
  10. Zerda Rice is ready to serve hot
