Baingan bharta is an easy, simply delicious, and relish side dish, is a great combination of roasted eggplant yogurt mustard oil, chopped onion, coriander, and green chilies along with some basic seasoning. Eggplant is roasted on a skillet or grill on very low medium over charcoal or stove, as well as can be roasted directly on the fire, this infuses the dish with a smoky flavor 
The word bharta (pronounced BHURR-that) refers to dishes in which the ingredients are roughly mashed This is the national cuisine of all nation-states of the Indian subcontinent and  Pakistan

Baingan bharta is usually served with dal chawal even Rotis, Smokey roasted eggplant is mashed and then added spices in it this baingan bharta is a very popular side dish and one of my personal favorites too. in my family is prepared bharta in winter with seasonal eggplant because this baingan is seedless and Bhata is the best choice

To prepare this recipe first make a few gashes in eggplants then put in a heated wok or grill

Roast it on a very low flame so that properly cooked eggplant from the inside, keep turning it in the pan or grill so that cooked evenly from all sides, once the eggplant's skin is easily removed turn off the stove or grill

Do separate all pulp from the skin then mash it keep aside, remove the skin of the onion and finely chop it set aside, Finely chop coriander leaves and green chilies, whisk the yogurt

Mash the further eggplant transfer to another medium bowl, and add powder spices to the pulp

Stir to combine well, and put onion and green masala in the pulp

Give it to good stir till everything is incorporated

Add whisked yogurt to the eggplant pulp, and stir to combine well

Pour raw mustard oil into the baingan mixture

Ingredients:
  1. 1-2 pieces, eggplant (baingan)
  2. 200g, homemade yogurt
  3. ½ cup, mustard oil (raw)
  4. 1 medium-sized, onion finely chopped
  5. 1 handful, of fresh coriander, leaves chopped
  6. 4-6 green chilies finely chopped
  7. Salt to taste
  8. ¼ tsp, cumin powder
  9. 1 tsp, red chili powder 
How to make the Baingan Bharta?
  1. Transfer eggplant pulp to the medium bowl and further mash it with the help of a spoon
  2. Start to now adding spices salt, red chili powder, and cumin powder
  3. Stir to combine well then add chopped onion, chopped green chilies, and coriander leaves
  4. Stir to mix well then add beaten yogurt
  5. Note, in this recipe yogurt goes in enough quantity, so you may adjust according to the eggplant’s weight
  6. Stir to mix well till turns well combined
  7. Now pour mustard oil and mix well further
  8. At this stage, you can adjust the salt in bharta and transfer it to the serving dish
  9. Baingan bharta is done to serve as a side dish with dal chawal and Rotis
